787 was all ups and downs on my visit. To start with, let's focus on the good. The vibe is very nice with a kicked back cafe feeling and lots of expression throughout. It seemed like the kind of place someone would break out their MacBook pro and work on their blog for hours on end. I ordered a flat white from the barista (more on him in a minute) and it was pretty good. Unfortunately, that's about where the good ends. Now for the bad. When I first walked through the door, there was 4 people in the cafe. A couple taking pictures of a bunch if art. A teenager in a swing chair playing on their phone, and a lady working on her MacBook pro (i don't know if it was a blog). What I didn't see was a barista. I figured, no problem, they are grabbing something from the back, ill look around. After 15 minutes, there was still no barista. I started nose around looking for them. I cautiously called "hello" to the back room with no answer. I asked the MacBook pro woman if she knew where the barista was and she smiles ans shook her head no. The photo couple had left and the teenager was too engaged in their phone for me to bug them. I decided to take a look in the bathroom. That's when I discovered another person in the building. Someone was innthe toilet stall watching videos on high volume. Behold, I think we found the barista. I called out "Hello" and was answered by an immediate flush. I walked out of the bathroom to avoid looking like a creep just standing in a bathroom while the barista washed up. Unfortunately, that wasn't a concern. Two seconds after I left the bathroom, he did too. Now I have washed my hands inna hurry before, but I promise you, there was not enough time to.do it between that flush and when he walked out. In fact, im pretty sure the toilet wasn't even done flushing by the time he walked out. As he followed me towards the bar asking what I needed in a very friendly tone (yes, he was very polite and friendly) I was thinking that I didn't want to order anything from him since he didn't wash his hands. Now I didn't say anything, but to my relief, he DID wash his hands once he was behind his bar again. Im glad he did, and im sure he chose to do it there because he wanted to get out of the bathroom quick, but it still felt awkward. So my purpose for going in that day was to buy a bag of coffee. The coffee was $28 for a bag, which is beyond expensive, but the flat white was good so I figured the coffee would be good too. The bag had no roasting date marked but the barista assured me that the coffee was always less than a week old. I took him at his word and bought a bag. Like I said, the flat white was good. Unfortunately, the coffee on the wall was not. After getting it home and opening it the next day, I was greeted with incredibly stale coffee that was so bitter, it was borderline undrinkable. I tried pourover, espresso machine, and aeropress, all of which I am pretty ok with. Nothing could bring this bitter, stale, sad coffee back from the brink of death. At $28 per bag, and an average double shot pull requiring 18 grams, I calculated that I was paying about $1.60 per shot to have this coffee at home. Much more for any other method of making it. At those prices it would be nice to at least have so.ething drinkable. I don't think I will be heading back to 787...

Reviews would seem to be overwhelmingly inflated positive as based on what I overheard, it affects the employees directly & they’re required to elicit a certain # of reviews daily.
Tried out this coffee shop today Vibe is super cute & adorable. Staff is sweet & pretty well versed on the provenance of the coffee & the lore of the company. Nothing against the staff, it seems like that info is pretty well rehearsed & pushed out by upper management to try to make “connections” with customers. A little on the creepy side & “drink the koolaid” vibe, pride over the organization should be organic & natural not spewing out a scripted narrative.
Alexus, Naomi, & John were manning the bar & they’re helpful, kind, & doing their jobs with great enthusiasm.
Empanadas & chocolate chip cookie were delicious, although a bit pricey. Same for the coffee $7+ for a cappuccino is a little extreme. 2 empanadas, 1 cookie, & cappuccino totaled $24.
Execution of the cappuccino was perfectly fine & good, although they forgot the vanilla I paid for. Was added after the fact & it was fine, they offered to remake it but I don’t like being wasteful. Flavor wise it was alright, not as good as expected for the hype. Not a huge fan of dark roast.
