I had to check this place out after seeing the cute display of tiny dishes in my feed. I also love hot soup/noodles and have heard of this noodle chain. We got here at around 6:30 pm on Friday night and it was packed. We waited for about 10 minutes for a table, which gave me time to checkout the menu. The decor is plain, simple and clean.
I got the A6 Tomato Pork Cartilage Rice Noodles. If you don't want any meat, you can order A5. They bring out all the ingredients in their own small dishes in a tray. You get lettuce, corn, ham, quail egg?, scallion, goji berries, noodles, and few other ingredients that I have seen but don't know what they are called in English. The piping hot soup in a clay pot came out about 10 minutes later. The fun part is adding the ingredients that you like in the soup to cook and wait few minutes because it is super hot! The broth/soup is delicious and flavorful. Best part was the pork cartilage! It was tender and savory. Cartilage is actually really good for you. It's high in collagen, which is great for your joints and skin.
My husband got the C3 Picked Cabbages & Fish Fillet Rice Noodles. I think his ingredients are slightly different than mine and obviously he has fish fillet. The broth/soup is lighter and kind of creamy. If you don't like fish, don't get this. The fish filet doesn't taste frozen and they gave you a generous amount. It was very good!
We didn't order any appetizer/snack and they have about a dozen choices. The usual popcorn chicken, potstickers, fries and stuff like that.
We did order Super Kumquat Lemon drink. It was super sweet and I didn't like it. I should have asked for reduced sugar but forgot.
Overall, a nice addition to Elk Grove. Plenty of parking on this side of Elk...

Out waitress brought out a plate of items to add which included tofu, wood ear, lettuce, ham, green onion and raw egg and some other items hard to translate along with a separate plate filled with cooked beef brisket and a bowl of cooked noodles. A few minutes later she brought out a large bowl of boiling broth kept hot with fuel gel from underneath. I threw everything in starting with egg and dug in. The broth had a rich flavor, like it had been stewing for a long time and was just spicy enough without causing discomfort and not too salty either. I stirred everything up, grabbed a piece of beef brisket and shoved it in my mouth, preparing for a long chewing session. To my pleasant surprise, the brisket nearly melted in my mouth. She even explained that they have peanuts in their dishes so please make sure to tell them if you have a peanut allergy. Went after lunch rush and before dinner so there was not a lot of people and it was nice and quiet. Tried the egg rolls, sticky chicken wings and beef shank dry noodle. Egg rolls were standard. The sticky chicken wings were crispy and had a robust garlic flavor...yum! When our beef shank dry noodle came out the beef was sitting on top and it was cold, but the noodles were hot. I'm not a fan of cold foods so we placed the noodles on top of the beef and waited a few minutes for beef to warm up. Wow...This noodle dish is definitely a must try.
