One of the worst restaurant experiences I've had as a vegetarian. To start off, the 'vegetarian/vegan' menu is filled with only impossible meats - I didn't even realize a 'vegan fish sauce' existed. We ordered the Vegetarian Pho, a Thai Iced Tea, and a Tofu sandwich that the menu specifically listed to have only vegetables/vegetarian friendly sauces as extra ingredients in the sandwich itself along with the tofu. Keep in mind that we did tell the staff beforehand we were vegetarian. The Pho was alright, and the Thai Iced Tea was horrible, but the Tofu Sandwich was outrageous. We realized that the sandwich had an extra ingredient that was not mentioned on the menu and asked what it was. The staff did not understand what we were talking about until 5 minutes later of repeating the same exact question where we learned it was some sort of 'animal paste' that was clearly NOT vegetarian and NOT mentioned on the menu. We then asked if it could be remade without only the paste, but yet again the staff did not even understand that, which led to another 5 minutes of clarifying that we just wanted the same tofu sandwich without said 'animal paste'. In the end, we just got dry bread with tofu, carrots, and bean sprouts. We lost our appetite at that point and had our lunch ruined. Tucked into a quiet shopping area, it manages to feel like a hidden gem—calm, clean, and surprisingly upscale for a pho spot. From the moment we walked in, the ambiance stood out. It’s modern, well-decorated, and peaceful—perfect for a relaxed meal whether you're solo, on a date, or with family.
The service was warm and attentive without being overbearing, and the menu had a great variety of classic Vietnamese dishes alongside some creative twists. I ordered the traditional pho, and it was excellent—rich, fragrant broth, tender slices of meat, and super fresh herbs. You could tell the ingredients were high quality and carefully prepared. My guests tried a few of the rice and noodle dishes, and each one was flavorful and beautifully plated.
What really set Pho-Ever apart for me was the balance it struck—elevated dining with casual pricing. In terms of cleanliness it gets good marks and the young man that checked me out was courteous and polite, always a huge plus! That being said, the bummers for me were the following 1) they do not offer shrimp pho. Although I eat beef, pork and chicken, sometimes I just want seafood, and shrimp pho is always my go to. Since they did not have shrimp pho, I decided to try the shrimp spring rolls. However when I took the first bite, I realized that it had one shrimp cut in half, and a piece of flank steak as well. Huge bummer! The peanut sauce was good, but I did not eat the spring rolls since they were not what I wanted/expected. When I order seafood, unless I am getting a surf and turf, I do not want those things together, and especially not in the same bite. That really turned me off.
