This place is at the very end corner of the attached food court to the big Great Wall Asian grocery store. There are a lot of places inside this food court but you cannot miss this as its line was longer than the rest of the other places combined. We were just randomly browsing what to eat and the line convinced us that it'd be good. We went for spicy beef noodle soup and intestine noodle soup not expecting too much. However, this place is fantastic! There's usually a good explanation when you see a bunch of Asians lining up.
I've complained about another Chinese establishment called 'Y Noodle' for being too oily while still tasting amazing. Chopin noodles are perfectly balanced - there aren't a lot of oils. It's also not light because you can taste all the right flavors in the right amount. You can drink it all up and still not feel all those oils. That's a perfect bowl of noodles in my opinion. I'd come back.
The only thing I have to complain about is that the tray they gave our bowls on was nasty! It didn't look like they cleaned it at all. I'm hoping it was an oversight and not how they usually prepare their food. If I keep seeing this from this restaurant, I will update my review.

Read moreChopin Noodle House’s specialty are Lanzhou noodles. This particular restaurant is inside the food court of Great Wall in Fairfax. The food court itself is kind of small and can get really crowded. The ordering at the restaurant can also be kind of chaotic hence the four stars. I think once it’s been open longer it’ll get less crazy.
The first time I ordered Triple Mix Oil Spill Noodles 三合一油泼面, basically mixed hot oil noodles. It was really, really good. People were randomly asking what I had ordered it looked that good. My husband got their dumplings in sour soup which was solid but not as good as my noodles. Their pickled cabbage 泡菜 was good but not sour enough in my opinion. Great Harvest is still my #1 there. Their beef shank salad was pretty good and they give you a lot of meat for the price.
The second time we did take out which I don’t recommend. We think we got the wrong thing but it didn’t help nothing was labeled so we weren’t sure what sauce went with what. The noodles also all stuck together but honestly that’s our fault for doing take out noodles. I recommend doing it in person.

I got A6 which is pork intestine soup. The broth was very flavorful and not overwhelming. You can adjust the spiciness level based on your preference. Being born in Asia as well, I have tried different pork intestine dishes. Werther in a soup, as an appetizer or a stand alone dish. I can confidently say that this place has by far in my experience the cleanest tasting pork (not stinky) intestine I ever had. I spoke to the owner (I think he was the owner) and he mentioned that all their ingredients are imported from China. Definitely recommend this place if you are someone looking for Chinese beef soup that has a lot of flavors. I can't wait to go back and try their other dishes.
