I went to Sushi Cho a couple of times and both experiences were great. My friend and I ordered the Chirashi the first time, along with the Takoyaki appetizer. Everything was SO delicious!! The pieces of sashimi were so thick and fresh, like nothing I've had in this area before. And outside of this area really, except for maybe Japan.

We saw customers sitting by us get the Hwe Dup Bap in this big bowl. It looked really good too and we ended up both getting that the second time we went. So bomb!!! If I had to nitpick on something, I would say that the pieces of lettuce in there could be cut smaller so it's easier to eat, but honestly other than that, there were so many ingredients in there along with the pieces of tuna and salmon that tasted so fresh, with the perfect amount of chewy. It all meshed so well altogether in the big bowl. I only added in a couple spoons of rice but was able to finish it all. It was so good.

I love Hwe Dup Bap and will definitely be going back to order that!!! I want to try their rolls too, which looks amazing in everyones photos. Maybe I will have to wait on the Hwe Dup Bap... for now... :)

As for the atmosphere, it's a modern minimalistic style with light bamboo colored flooring and walls.. with plenty of sunlight that comes through the windows and provides natural warmth to the space. The restaurant feels light, airy, and inviting. The staff was friendly and attentive. Parking can be a bit limited, but I haven't had issues...

Food was absolutely amazing, portion sizes were extremely generous, and the staff and atmosphere were both a delight.

The miso soup were flavorful, the salad's had a nice refreshing dressing, the shumai with shrimp and crab are really cute and a great, simple, non-overfilling appetizer, and the crab rangoon (while heftier for an appetizer) was incredible! Definitely the best variant of it I've ever seen. Instead of going for the traditional wonton shape, actual crab is wrapped up in the pastry to look like a rectangular package. It was chock full of filling and crispy, and paired well with the salad.

We got the salmon teriyaki bento, the salmon sashimi salad, two different salmon rolls, and a shrimp tempura udon. All of the portions were extremely generous, especially the sashimi salad which arrived in a really big bowl! The amount of tempura you get with the bento is also very generous - shrimp, broccoli, green bean, onion, and sweet potato tempura, along with the salad, rice, salmon teriyaki with veggies, and 3 pieces of a california roll.

The service was very kind and helpful, and they evey brought the seared salmon belly nigiri on lemon that was lit at the table, complementary at the end of the meal. This is my second time dining at this place. I went there the first time with the recommendation from a friend. That was about a year ago. I arrived around 1 50 and the receptionist greeted me with “can you order the food by 2 15? No “welcome or hello”. Later, they tell me that the kitchen closes to take a break. Well, excuse me! Sat down promptly and made a quick decision. Waited for someone to take my orde for about 10 minutes. I had to flag someone down to take my order since I didn’t want the kitchen to close before ordering. The food was prepared quickly and it was actually pretty good. I went there again today for dinner. Got there just after it opened back up at 4 30. Was greeted better this time and was sat down promptly to order the food. After ordering, the food was served quickly and was pretty good just like the first time. The restaurant had four tables full but without asking, the server dropped off the check even though we were still finishing the food. The server didn’t say anything either. Did I miss something ? Were we holding up the table? The restaurant was not busy. Hmmmm. Even though the food is pretty good. Never will go back to this place. Rudeness cannot be tolerated twice! One of the worst service!! Great lunch specials. I love their lunch Chirashi. The price is reasonable and the quality of sashimi is superb. Each meal comes with salad and miso soup. One thing I love about their lunch Chirashi is it’s simplicity. Four types of Sashimi and shrimp. I don’t like restaurants adding other seafood besides sashimi and charge more for variety. The rice bed below Sashimi is perfectly balanced with sweetness, sourness, and saltiness. My personal favorite in the area. I used to come here every week for a month. The manager and the owner are both welcoming. One day, salmon in Chirashi smelled a bit. I finished it anyway, paid my bill, and let the manager know on my way out. He apologized right away, tested their inventory, and came after me to my car and issued me a refund. I said it’s fine but the owner called me and insisted that the quality was not acceptable to his standard. The owner has pride in his food quality and I can trust anything coming out of that kitchen. Bulgogi bento was ok. Tempuras were great - crispy outside, tender inside. Bulgogi was a bit salty. I would recommend their sushi/sashimi dish. That’s the real deal. Our lunch ended with complimentary special sushi from the kitchen that ignites fire on the plate to grill the fish. This place is a must try in Fairfax.
