They have now started making these specialty sandwiches.. these are next level.. the freshly baked the focaccia bread so it takes a little time... its not like ordering from a regular sandwich shop where the bread is pre-made most of the time... but wow was it worth the wait.. the picture in added was of the Madrid... they have a few others and if you can't want for fresh fresh bread they have good rolls from the bread chic that they use also. Good stuff and the flavor profiles... wowzer.......
Ordered their deep dish pizza today. Excellent execution. THE CRUST, THE CRUST, THE CRUST.... For those that are looking for that perfect mix of crispy edges with that soft, doughy leave the impressions of your teeth kind of crust this is it. The cheese works well and the fresh toppings are just the cherry on top so to speak. Bake and cooling time is around 35 minutes for a deep dish which is actually faster than most Chicago or Detroit style pizza places. This is gourmet level stuff people so be patient and you will be rewarded.

Tried this new place today. Ordered one of their multi-topping pizzas off their menu. It was very good. Ingredients are fresh. Cheese is nothing memorable however the crust... that crust is among the best I have ever had on a pizza anywhere. Crunchy on the outside and chewy like dough bread on the inside. Wow.... They also do a Detroit style pizza as well and we saw a few people in the restaurant with those at their tables. I overheard that they may be expanding their menu to include fresh sandwiches and with the way they make bread it should be amazing. The place is quiet, it's clean and the staff is friendly. Yes you order at the counter but that seems to be the norm these days which is fine. Pizza is always such a subjective proposition for people these days but I can tell you that having been all over Northern Colorado trying pizza joints this one is up there. Fuego Pizza perfectly exemplifies the definition(s) of the word “fuego” in their name … they are the hot spot in town / they are obviously passionate about what they create / and they are genuinely wonderful people. Is it the perfect pie? From this self-proclaimed pizza aficionado … it is closest to perfection as it gets. I will let you decide for yourself… all I know is for me - this is heaven. From the chewy-crispy crust, to the high quality cheese and amazing sauce - you just can’t ask for more. BUT the folks at Fuego deliver above and beyond with traditional selections and their take on some of the most interesting combinations of toppings - Fuego Roni is my new favorite but I am truly a cheese pizza kind of person so to get me to venture out and try everything says a lot about this little gem. Read moreIf you are someone like myself who grew up in the Northeast and have been searching far and wide for a perfect NYC style thin crust pizza, your search is over! I can not speak highly enough about this place. I normally am not a big crust guy, but this pie has some of the best crust I have ever had. It is not rock hard and flavorless like so many other places. It is amazingly soft yet crispy and is out of this world good. The sauce is bursting with flavor and I felt transported back to NYC.
The place itself is really clean, has some of the cleanest bathrooms I’ve ever seen in a pizza place, and they also offer sandwiches as well. The owner is super down to earth and an absolute pleasure to speak with. You can tell how much he cares about quality ingredients and top notch customer service. I am ecstatic to have found this place and my search for the best pie in Fort Collins is officially over.
