This is my new favorite restaurant in Fort Collins and it isn't even open yet. Still in "soft opening," I am so glad I signed up. It's cute, cheery, the service is spectacular, and the food SO GOOD. I had a sandwich called Gio's Sando (mortadella with pistachio, fresh ricotta, shaved lettuce, sun dried tomato bruschetta, garlic confit, fresh basil). It was delicious with the house chips as a side. The chips are amazing, some kind of subtle spice that worked perfectly. My friend had The Breeze sandwich (prosciutto, french brie, blackberry jam, arugula, olive oil, sea salt) with the tomato bisque and said they were perfect. I will be back often. It was incredible. The chicken was perfectly cooked but what really made the dish was the sauce. Rich, creamy, and incredibly delicious! Dessert was a Passion Fruit Pana Cotta. Onion soup was a small bowl of spongy bread soaked in some soup and cheese without much soup or anything liquid left under this paste. Ambiance/decoration average with harsh lightning.
