I discovered this restaurant through social media and was immediately intrigued to learn it is affiliated with the well-regarded Taiko brand. As a frequent patron of Taiko’s Irvine location, particularly for their sushi, I was curious to see how this new concept compared.

Overall, the experience exceeded my expectations. The ramen stood out for its depth of flavor, particularly the distinctive yuzu notes, which are uncommon in traditional ramen and added a refreshing twist. The sushi offerings were equally impressive—thoughtfully curated, innovative, and executed with precision. The creativity displayed in the sushi menu reflects a bold yet disciplined approach to contemporary Japanese cuisine.

The ambiance closely mirrors that of the original Taiko, creating a sense of familiarity that returning customers will likely appreciate. While the culinary experience here is distinct in many ways, it still feels anchored in the quality and atmosphere that define the Taiko brand.

May 2025 Saturday the Chicken "FV" Style" was dry and did not have a lot of flavor. The spicy tuna roll was small in stature and did not taste fresh. A fishy taste was present. I asked for a certain roll not on the menu which the Sushi Chef knew all about, but the Man in charge, said no. One more thing I had to stand in the doorway for a long time before anyone seated me. I am a large man dressed in a bright orange hoodie, hard to miss. The Sushi Bar had 2 people seated and there was 3 open tables. I did not try the Ramen so it may be worth 18.00 + tax and tip? I know they just opened and are working out the kinks so I will wait a bit and try it again. I wish them luck, but do we really need another Ramen Sushi place in FV? Nothing here screamed "we are different than all the others." The servers were very pleasant the place was clean and the food came out on time. There was an older gentlemen behind the sushi bar who looked out of place. He looked more like a manager/owner an he did not seem very happy, I hope his night finished with some good energy and happiness. Maybe a sick call or no show...

I don't know anything about this chef/brand/chain so:

New ramen spot that opened up to almost no fanfare on my social media. Seems to specialize in chicken ramen, but there's also sushi!

The chicken was tender and soft, dark meat that falls off the bone and is easy (aka not a mess) to eat. The broth is creamy, salty, and the onions give a quick bite so that it's not overwhelming.

Surprisingly I might have liked the tomato broth more. I'm usually never like that but it was rich, creamy, and well balanced.

Noodles were great, curly and chewy. The egg had a great jammy yolk.

Give this place a shot! It is a bit expensive (~$20/bowl), but I could see this being worth it to many people. I certainly want to come back!

Sushi was ok. It wasn't gourmet sushi, but it hit the spot. My friend said the scallops were a bit fishy but they tasted fine to me.

Also note there's a sign that says the menu is reduced as it's a soft launch. Hopefully this place just...

A great option, tastes very different from most places. The Yuzu Shio Paitan was great. The sour Yuzu flavor counteracts the creaminess of the broth, allowing for both flavors to meld together perfectly. The tan tan spicy miso was creamy and spicy, a great combination. I wasn't able to try the special taiko soy naniwa paitan since they sold out, but will try next time. I had the yagen karaage as an appetizer. It was a nice crunchy texture, but I wouldn't get it if you're not a fan of the sensation of chewing through cartilage. The coedo IPA was solid. It had some hops, but wasn't crazy enough where it was bitter or overly strong like some American IPAs. It was still slightly sweet like most asian beers. It complemented the ramen and appetizers well.
