I was coming back from Charlotte today and I wanted some rib tips because me and my grandmother we picked up four slabs of ribs this past Saturday and I tried to rip tips on because they give out free samples. The rib tip was bold had the right amount of spice and it was juicy. It was good. It made me wanna come back for these rib tips. I first fell in love with rib tips in south being Indiana because a good rib don’t need no sauce but with the right sauce to complement it, it’ll take it to a 10. So I go back today I order rib, tip platter no size extra rib, tips and sausage sandwich and a slice of sweet potato pie. It was a little mixed up with my order, giving me the wrong receipt with the wrong ticket number so I finally got my order. I get home to enjoy it. The first three bones threw me out because I’m noticing y’all gave me cut up ribs and not all rib tips! That reminds me of places that really don’t know what rib tips are because cut up or chopped up. Pieces of ribs is not rib tips.! So that disappointing me and I guess you could say it started off bad because yes I went there at 8:15 but I said I’m gonna give them a try because I know they close at nine. The food should still be good or great. I had a free sample of the turkey tips oh my God that they melt in my mouth, but it didn’t have that bold you know spice to it how the regular real tip hat on that Saturday. And then she gave me a sample of the real tips. Being honest I speed it back out because it was so chewy. But I got home. I took one bite of the sausage sandwich. I’m in heaven flavor bursting out, but also that spice I’m getting I love it. Then I get to the rib tips and I was let down because half of my plate is filled with chopped up ribs that barely have any meat is just a thick old bone! Anybody that knows whether you from up north or you know the Midwest rib tips don’t have the actual bone rib tips have the Cartlidge and it’s white. So that’s why I gave you a three out of five stars because also I know it was close to closing time but it was hot. I don’t know what’s going on in there. Atmosphere was clean except for it being extremely hot the sauce sandwich I would definitely come back and get it again the rib tips I would possibly try again, but I would have to let them know. Read moreI went there for a quick bite to eat. I assumed it was "Black Owned" Maybe it is, don't know. Everyone in the place was Mexican. I ordered two dinners. One of which was a chicken dinner. They assumed it was a too go order, but I decided to sit in and eat. I was so discussed. They gave me 2 legs and a thigh. All 3 pieces burned Black and dry. I went back to the counter, and showed it to the person who took my order. I turned the chicken and she said " Oh no don't touch it" then she, no problem, we were just gonna throw it away anyway. Which by her reaction lead me to believe the were probably going to resale it to the next unsuspecting customer. They replaced the order, and I asked why was there only 2 pieces of chicken in the new, and the other order had 3 pieces. There was a girl squatting on the floor laughing as I was questioning the order, the counter person said oh she gave you an extra piece as a courtesy. I said it was because it was not edible and burned Black to a crisp. I told the person squatting on the floor who prepared the order (laughing) it was totally disgusting and I didn't find the humor. I typically to ATLANTA FUSION BARBARQUE, but thought I would give this dump a chance. Never again, to the OWNER- Herbert. You should probably make sure you workers are serving all people the same with respect, honesty, and integrity. It took me a while to place the order. Person taking the order couldn't understand what I was asking for. It finally came down to yet another non English speaking person, coming from behind the counter for me to point to what I wanted on the menu what I wanted to order. Overall food was -5, presentation was -5. Professionalism of workers -8, quality and taste of food is -9. Read moreI stumbled across Herb's just driving down Windy Hill and when I smelled the smoke coming from the pit up front, I knew I had to make it back for lunch the next day and I'm glad I did.
Herb's Rib Shack is a no frills BBQ establishment which is the best kind. You aren't getting table service (if you find a seat), but as long as you know that it's really a to-go place, you won't be disappointed. I did get to briefly meet Herb and he was very nice, definitely seemed like he's been doing BBQ a long time. Everyone there was hospitable and friendly.
Unfortunately, they didn't have mac & cheese when I went today, so I just ordered a slab (two of the boxes in my picture). The standard side options are baked beans and potato salad, they rotate more sides each day like mac & cheese, collard greens, and coleslaw (mac being the only one I'd like, so I can't attest to how the sides taste).
The ribs are some of the best I've ever had! The flavor profile is definitely the best I've had, minor complaint was a bit of inconsistency in the meat in terms of doneness (a few were overdone, but this isn't abnormal when smoking ribs). They have just a little heat, enough that you know it's there and might get a little sweat going on for spice lightweights, but not enough you have to take a break to cool off. Tons of savory and smoky attributes, it really is the best rib rub I've tasted and I've had A LOT. The ribs do not need sauce, do not get them with sauce on them, get it on the side like it should be.
My only true complaint is the sauce. It tasted like generic sauce, maybe sweet baby ray's or something. While I agree a sweet sauce is perfect for these ribs, the sauce just isn't very good and nowhere on the same level as the ribs. The ribs are so good you don't need sauce, so not a huge deal.
