I've been going to China Rainbow for 15+ years. I'm sad they are gone but I am also a fan of Vietnamese food. Pho Thein Long was a welcome to this shopping center. This new restaurant is a big contrast to the old China Rainbow. This new restaurant has been remodeled and lots of "ambiance" upgrades were put in. It's very clean and has an upscale look and feel.
It's main focus is Vietnamese food. However, it has some popular Thai dishes, too. If you're looking for Chinese you'll be disappointed. But, don't be disappointed too long because Vietnamese food has lots of fantastic flavors and if you haven't tried Pho, you're missing out.
Quality ingredients are used here. That's the first thing my parents noticed. I noticed the upscale decor, the higher quality napkins, chopsticks, and water cups. When the food arrived, the taste blew me away. I had the grilled pork and the flavor was amazing. Better than the the other two Vietnamese restaurants a mile shot away. They also offer a variety of drinks including BOBA.
I had a party of six so we were able to enjoy several dishes. My parents shared a dish.

Someone else commented about the cost. Yes, it is a bit more than your typical "Chinese" restaurant but worth it. The quality of the ingredients, the flavors, and the new upscale look commands it and it's worth it.
Was it all good/fantastic? No. There was one thing that I didn't like. The A1 Crispy Eggrolls. I eat them at every Vietnamese restaurant. These were not that good. They were cooked perfectly, very crispy and smelled fantastic. However, they were so overpacked with filling that the eggroll was very dense, to the point that they were too hard/firm. Normally, they are served with several pieces of lettuce and mint leaves. They didn't do that here. That was the only disappointment.
[UPDATE] I went there for lunch today (2/20/2025) and ordered these eggrolls again. This time the skin was thinner and, while it was firm, it didn't feel too hard to bite and was more consistent with other restaurants I've tried in the past. So I say it is an improvement. It also did come with one large piece of lettuce and some mint. I'm pleased with it now.
On their website they showed photos of Bahn Mi sandwiches. They actually don't offer them... yet. I'm looking forward to when they do. This may be a regular lunch spot for me if...

The tendon was silky and tender, the tripe perfectly cooked, and the fresh herbs and garnishes made the bowl come alive. The fried pork vermicelli bowl was equally unforgettable, with crisp and flavorful pork that paired beautifully with the delicate noodles, fresh vegetables, and vibrant sauce. Every bite was balanced and deeply satisfying.
Altogether, it was one of those meals that reminds you why dining out can be such a joy. Outstanding service, a warm and welcoming atmosphere, and food that speaks for itselfβthis is a place that clearly takes pride in every detail. Five stars...
