Mil Colibris Bakery and Cafe
While waiting for my client at the Ravinia Metra Station, I noticed Astro Coffee Roasters next door. Hoping to find some breakfast, I asked inside but they only had coffee. That’s when I discovered Mil Colibris Bakery and Cafe right next door. The moment I walked in, I was welcomed by the warm, inviting atmosphere. Initially, I was unsure whether to order at the cashier or head to the back where the bakery items were displayed. I quickly figured out that I needed to order at the cashier but also check out the bakery section.
While perusing the bakery offerings, I was tempted by a single remaining concha cookie and churro donuts—two of my favorite Mexican pastries creatively reimagined. The concha, traditionally a sweet bread, had been transformed into a cookie, and the churro had been turned into a donut. This level of pastry mastery was impressive, but mindful of my carb count, I decided to save those for another visit. I then turned my attention to the menu. It was around 11 AM, so brunch seemed appropriate. I chose the chicken-avocado-bacon panini, while many others were ordering the popular breakfast burritos. I also opted for a salad instead of chips to keep things light and ordered a café americano, specifying it for here to enjoy the full experience.
After placing my order and receiving my number, I found a lovely spot outside. The ambience was perfect—Highland Park's pleasant atmosphere with people biking and walking by. The outdoor seating, though limited, added to the charm of the experience. The staff brought my food to the table, and I couldn’t resist snapping some pictures.
The panini, cut beautifully in half, was perfectly balanced with crispy bread and flavorful fillings, including a guacamole-style avocado spread that wasn't messy. The side salad, with fresh cucumbers and dressing served on the side, was a refreshing accompaniment. The café americano arrived in a mug, well-balanced with just the right amount of espresso and water.
The overall experience was delightful. Mil Colibris has now become a staple for me, and I can’t wait to return to try the churro donuts and concha cookie. You really can't go wrong with any of the grab and go cake, cupcake, or pastry items. We've gotten many of them, and we've also gotten special order cakes from here that have been wonderful. Their breakfast burritos (vegetarian or not) are a great quick breakfast option. The quiches (which are relatively new) are exceptional. The hibiscus agua fresca is a lovely refreshing drink for a hot day.
