Two nights ago — 450 miles away from Taco Hut — I struggled to fall asleep due to one persistent thought running through my mind. What was that thought? I invite you in, Google review reader; here was the thought:
"Soon, I will bite into a Taco Hut Taco Burger for the first time in seven years."
In my mind, I could recall the smell that wafts through one's nostrils upon entering the small stucco restaurant. I could hear the sound of the wax paper being unwrapped. I could envision the bright yellow tape around the bottle of "milld" sauce. This long-ago, wondrous experience from my childhood filled my head; no wonder I could not surrender unto sleep.
I beckon you to now join me in the present. Today, I returned to Taco Hut. Happenstance and coincidence has brought me back through Kansas this weekend from my home states away. Since my grandfather died in 2013, I've had no reason to return to the salty, central-Kansas city which was the backdrop of many of my childhood summers.
For the past seven years, my memories have sustained me. But today, a Taco Burger would be my sustenance.
My husband — joining me for his first time in Hutchinson — and I pulled up to Taco Hut. My longing for nostalgia had convinced me that nothing had changed; but immediately, that notion was met with resistance and I spotted the new neon green exterior sign. I snapped a photo and texted it to my mom miles away so she was aware of the update.
I ordered my usual — the same meal I've enjoyed since I was a young girl — a Taco Burger, no tomatoes, mild sauce. My husband ordered a Sancho at my recommendation, and we shared a plate of nachos with meat.
We sat. I was thrilled to receive the same tiny slip of paper with our order number on it that I remembered. Looking around, I could see that some things had changed. The jukebox has been replaced with toy machines. The older woman wearing the purple shirt was no longer behind the counter. But the menus were the same. The tile floor hadn't changed. And, when I closed my eyes, I could swear that I heard the laughter of my mother, uncles, and cousins coming from the back room. (It was my imagination though; a recollection of simpler times, as my husband and I were the only patrons in Taco Hut at this moment.)
Finally, my husband walked to the counter to pick up our food. Admittedly, he was skeptical of Taco Hut as much as I've talked about it throughout the years. Could it really be THAT good?
He chuckled as he sat down.
"What?" I asked him.
"These nachos look like something I could make in the microwave at home," he said, still laughing.
While that may be true, a few minutes later he followed that statement with, "Well, this is the best "this kind" of food I've ever had..."
As we ended the meal, he said, "I'm glad we came."
"Really?" I implored, hopeful.
"Well, kind of."
(That's good enough for me.)
Anyway, the Taco Burger was as delicious as I remember. I do wonder if they have changed the meat seasoning since my younger days, but it's very possible that my memory simply misleads me.
I don't know when I'll be back to Taco Hut. It may be years again. It may once again be a major life event, like a funeral or a celebration, bringing me back. But until then, today's events will join the collection of precious Taco Hut memories that are already an inherent part of my being.
While I know many people don't think much of Taco Hut, and native Kansas dwellers certainly take it for granted, it matters to my family and me more than the teenage boys and old woman taking orders behind the counter could ever know.

I got a taco dinner and I thought the beans were good and also the tacos were fine. We ordered chips and cheese and the cheese tasted exactly like what you’d get at a concession stand at a sporting event when you order nachos. We also tried the corn salsa which I thought was pretty good. There were 4 of us, we spent about $25 or so, including drinks.
