I had pretty high hopes for this place due to all the 5 star reviews, but after eating here, I would recommend against it. The food ranges from decent to pretty mediocre depending on what you get. The fries were pretty good, the elote was alright, and the fish taco was pretty mediocre. If you've had good Mexican food in CA or TX, this place is not comparable at all. The wait time was absolutely ridiculous though. We had maybe 7 people ahead of us in line, and it took ~50 min (!!) just to have our order taken, with another ~20 min waiting for the food after. I don't mind waiting for places that are really good / popular, but I don't understand why things were so slow here. Pretty crazy wait for a food truck, and definitely not worth it. I can also see why this place has so many 5 star reviews. They're just buying the reviews (you get a free drink or guac for leaving a review). Obviously they're not forcing anyone to leave a 5 star review, but there's certainly some social pressure to do so.

I have been back and forth to Kauai over the past 15 years. And I have driven past this food truck many times. I am so glad I finally got to try it! We got the carne asada tacos and a pork burrito bowl. My 2 year old kept asking for more of the burrito bowl and my husband had to get seconds of the tacos. Everything was absolutely delicious. This place is a must visit if you are on the Koloa/Poipu area!! To be clear: I have no intention of reviewing some place for free food. This place will probably see me again. But not for free guac. They will see me again because it was just that good. They will never even know I wrote a review. I wish the food truck park area was a little nicer. It would make the atmosphere a little better. Not a knock on the food trucks. More a point of just overall needing to beautify the space.

Food: 11/10 Crew: Amazing and super kind My overall rating: I’d walk here even if there’s no parking.** As someone who has tried and eaten a lot of Mexican cuisine in the U.S., the idea of going to a food truck was definitely a risk for me — but it was worth it! Quesadilla: Generously filled, with amazing cheese, sauce, and flavor. Elote (Corn in a Cup): I tried this for the first time, and you absolutely must try it too! A perfect snack with an incredible taste. The team’s energy, hospitality, and communication were fantastic. šŸ“Watch out for the cheeky chickens, and don’t forget to share your corn with them! ** This is a special rating system I created for my contributions.

Listen, if you are like me…you might feel like ā€œfood trucks a very 2017, sure they are fine, but most are just meh at this pointā€ā€”you’re not wrong, but Taco Libre is the mf’n exception. The burritos, the tacos, the amazing chefs and team there are just absolute fuego. The flavor left me and my girlfriend wondering how the heck they could make such a delicious burrito and taco in a truck that small (and my gf is from California and I am from Texas). This place is 10/10. We recommend anything on the menu and adding a side of beans & rice because it’s all delicious. Pop across the street for a tall boy or wine from the grocery store and no ka’oi bruddah. If you are visiting Kauai and don’t visit this food truck, then you aren’t wrong, because it’s Kauai…but you aren’t right either…because it’s Taco Libre! This place rips!! Thank you, Taco Libre for one of the best dinners I’ve...
