I give it 2 stars only because there is worse BBQ down the road in Junction, Cooper's which rates barely 1 star. As for Bill's this is my 3rd time to eat here because anyone can have a bad day, so before I down/up rate any place I want to confirm my thoughts.
Ordered a Chopped brisket sandwich plate and a sausage ring, standard fare for me. The chopped brisket sandwich was large and stacked high, in fact it was the biggest and most meaty sandwich I have got from them over my 3visits. Juicy, yes but very fatty which has the effect of making the meat not as appealing. Sadly the fat was in sufficient quantities to overwhelm the meat itself, it was running out of the sandwich. For sides we had Potato Salad, Cole Slaw and Pinto beans. The Potato Salad and Cole Slaw were tasty, but not made there! These are commonly bought in bulk at Restaurant Supplies, which overall is ok, not faulting for that. However the Pinto beans were an embarrassment to the poor bean. I believe they were made in-house with beans, water and maybe they forgot salt as a result tasted more like wet cardboard, definitely pass on those and they did contribute to the low rating. The BBQ sauce is also not made in the house and follow the trend of sweeter is sweeter. My guess is another bulk purchase along the lines of Sweet Baby Rays BBQ sauce. I got some on the side found it just too sweet for my taste.
Sausage Ring: Opened the package and there was no ring, just some sausages, each about 4+ inches long and not connected in any way. I took one bite and my partner took one bite and we threw it away, I would not even give it to my dogs. Overly greasy, but I could done that except for the added filler to the point that you had to ask where is the meat? Best description is meat flavored sawdust. It was evident the sausage was made in small batches, probably they are getting it from a local butcher shop but it was was inedible. There were some construction workers sitting close to us and I gave it to them. They were having lunch and were good for some additional fare...the look on their faces said it all and they each had one bite and agreed, then threw it out. So 2 stars only because...

Got the three meat plate ( ribs, pulled pork, and brisket.)
The Ribs and pulled pork were tender hut that's where the compliments end. Both meats were severely under seasoned and there was no smoky flavor to be found. I just don't understand how the ribs could have such a nice red color from the smoke and lack any sort of smoky flavor.
Thought to myself maybe the sauce can save the meat. Nope! The sauce tasted like it was having an identity crisis. Wasn't sweet or tangy and the texture was gloopy like a gravy. All it did was provide some moisture.
Potato salad was average tasted like any ol potato salad you can get from Walmart or HEB. Coleslaw again average, tasted like I went to KFC and got a side of slaw from there.
Finally the brisket. What a major letdown. Impressive looking bark on the outside but again lacked seasoning. Both the lean and fatty brisket were dry. How they manage to make fatty meat dry is beyond me. I've always heard that Texans take their brisket seriously and the brisket here just feels disrespectful.
The atmosphere was okay. Clean and had a lot of local decor in the dining area.
Final thoughts... don't waste your time. If this is the best BBQ in town you're better off going to another town to satisfy your BBQ cravings. What an absolute waste of time and money. What a...

Standard Texas bbq menu: Handful of meats with beans, slaw, p-salad as sides. We went with pork ribs, brisket and turkey along with all 3 sides. We asked for pickles and bread, but weren't afforded such additional asks in our order.
The food looked tasty and smelled amazing on our plates, but didn't meet that bar. It was just ok. I didn't not want to eat it, but it was nothing of note. The turkey, which isn't my typical BBQ go to, was the clear standout. Rubbed and smoked just right. I would order that again.
The beans were a let down...pretty blah; not really charro, not really Kansas City...almost seemed straight out of a can and heated for a bit. Minus 1 star. The potato salad was tasty. We weren't served bread or pickles with our meal, which was a big let down. Minus 1 star.
The atmosphere was great. Wooden shack, picnic tables, bits of history and Americana on the walls strewn about. Amazing smell, outdoor smokers and pits, wood shacks bolted together. The walls oozed a history of grilled meats and sauce.
