Great food. Rancho Pascual is a food truck only in the sense that there is a wide variety of food trucks. Some are only so-so and some are really, really, good. Rancho Pascual is in the latter category, and, in my opinion, better than any similarly-priced brick-and-mortar restaurant, and better than a lot of restaurants that charge even more. We had the Arroz Chaufa con Mariscos and the Peruvian ceviche. Both were exceptional. You're down in the Keys, so you have the right to expect fresh seafood, which RP definitely has. But it's also the recipe and ingredients which really stand out. I've had Peruvian ceviche all over (except in Peru! hoping to visit sometime soon!), including home made, and this was some of the best I can remember. The chifa was so good that I immediately looked up the recipe even before I'd gotten halfway through the meal. I regularly use all the listed ingredients, but none of the recipes I read added up to what I was tasting. Turns out that the owner/chef has a secret ingredient which he good-naturedly revealed to us.
I gave RP 3 stars for atmosphere because it's a food truck next to a small RV camper park inhabited, it seems, mainly by sunbird retirees living their best lives on the beach. There are 3 or 4 tables under umbrellas, music from a radio, and that's about it. We thought it was just fine (and the environment gave us a lot to talk and think about in terms of retirement plans, and out of curiosity we ended up google-shopping the prices of the various campers we saw there), but many people wouldn't call that "atmosphere" per se. Read moreI would highly highly recommend anyone try Rancho Pascual while they are in/near key largo. Fantastic food and the quality was amazing. The shrimp tostones rellenos are a must try. They were incredibly fresh and one of the best things we had during our entire trip in the keys. The owner/chef was very nice and is passionate about his menu items, having given us an explanation of the origin of the Chaufa fried rice dishes. The Lomo saltado was very fresh and had great flavor. We also tried a Mamey Sapote (I believe it was this fruit) smoothie based on the owner's explanation of where/how this fruit is grown and the specialties of it. It was like a strawberry banana smoothie but with its own unique taste to it. For parking, there is gravel along the side of the street across from Rancho Pascual. There are signs on the building next to it that say no parking/towing enforced, but I believe this is where you are supposed to park (which is where we ended up parking) when visiting...

The very next morning I came back to try the omelette sandwich with everything (ham, onion, and cheese). The sandwich was presented very nicely and looked delicious. The first bite surprised my taste buds and made my mouth water more and more. The further I got into the sandwich it continued to taste better every bite. This sandwich definitely deserves a five star 100%. The owner gives you his recommendations on the food you should try and this sandwich was his first recommendation.
