Lucy's Tacos was as complete an experience as you'll get from a food truck. Service was prompt and friendly. I like that there is an indoor climate controlled dining room adjacent to the food truck, in addition to outdoor seating. I can tell this place is a local favorite in La Junta. I was lucky to arrive just before a long line formed for the lunch rush.
The menu is OK, but without as many food options as I'd hoped. The standard Colorado taco options of carne asada, pork adobada, and carnitas were available, along with carne asada fries.
I ordered the carne asada platter and have mixed feelings about it. The tacos were very amply sized, properly served with two tortillas each, and tasted delicious. But as is unfortunately common in Colorado, the meat was greasy and overly processed (cut up into tiny pieces). The beans were freshly prepared and I appreciate that, but I was surprised by an unexpected grassy taste.
Was it worth the 90 minute drive from Fountain? No. But I wouldn't be surprised if these are the best tacos you'll get in the area. Very filling, tasty, and...
Read moreI really want to give Lucy's Tacos a higher rating but their lack of consistency and inability to get an order right is just too much. When they get your order right and they are having a good quality day then they are delicious and worth it. Sadly though that is becoming less and less frequent. More often than not now they either get the order completely wrong or it's just made so differently. For example sometimes their tortillas are perfect, other times they are burnt. One night we bought a burrito and it weighed 16 ounces. Second time we ordered the same burrito it was only 12. (Still huge but that is a significant difference.) Tonight was particularly disappointing. I hate guacamole so I always order my carne asade chips with NO guacamole. Tonight's order had EXTRA guacamole, plus a few random giant slices of onion. Very disgusting.
If you feel like playing Mexican food roulette then Lucy's Tacos is a good place to go. But if you like knowing you'll get what you order (both in taste and accuracy) then you'd be better served going...

Tacos were not the cheapest but in my case were generously filled, such that I could pull the shameful gringo move of making two tacos out of each by splitting the doubled-up tortillas. Lengua was good with larger chunks of meat than you often see, tripas had the perfect balance of being crispy but not dry, only regret was a bland and very gloopy chicharrón taco. There’s fair-weather seating at metal picnic tables right next to the truck, not super clean but obviously that’s part of the vibe.
