Incredibly good coffee! I live in Portland Oregon where having good coffee is a life necessity. I was taken back by how good the coffee at Sunshine Coffee is... consistently! Their coffee is on par with Portland's best roasters like Stumptown & Portland Roasting! It's as if Lake Elmo went from a town of 75 cents a cup Folgers coffee, to espresso drinks that rival the best available anywhere. They have mastered the discipline of careful bean selection & custom roasting to produce a consistently smooth coffee that allows all the flavors of the drink, regardless of how subtle, to come through. The coffee coming out of this boutique shop is, for my taste, prepared on par with 100% Kona or Jamaican Blue Mountain; it's that good. And I am so thankful to the sweet folks at Sunshine Coffee that provide us access, in Lake Elmo, to first rate coffee! I am currently sipping on another PERFECTLY made Latte from Sunshine. One of my hobbies is to explore the best coffee shops in my area and when I travel. And I am passionate about finding high quality, well made coffee. I've been to hundreds of coffee shops all over California, Washington, Colorado, and the Twin Cities, and I tell you, this is as good as it gets. Sunshine is my favorite go to, because they ALWAYS, consistently deliver perfectly made drinks. The espresso is always insanely smooth and the flavor is out of this world. Never burnt, bitter, or sour. The people there are also incredibly genuinely kind, warm and friendly. It feels like a community hub and gathering spot.

I drive 15 minutes one way just to go to this coffee shop, skipping several other closer options along the way. The coffee is delicious, not burnt, and aromatic. The pastries offer options that include gluten-free, and they are scrumptious. There are a couple of small sitting spaces indoors and a nice sitting area outdoors. The atmosphere is welcoming and you can tell the staff really enjoy being there. I regularly see at least one owner at any given time there as well... so you know it's a place of love and dedication to their craft. My only complaint is that there isn't a larger indoor lounge area and the only reason that is a gripe is because I love this place and could spend hours there drinking coffee and eating pastries while I study.
