If you're a fan of the rich, savory flavors of traditional Mexican birria, then El Vagon is an absolute must. This unassuming eatery has quickly become my go-to spot for a satisfying and delicious meal, thanks in no small part to their standout dish: the loaded birria fries.
Savory shredded birria embraces a mound of golden, crunchy fries, imparting the richness of its slow-braised flavors. This indulgent treat transcends mere sustenance as the fries luxuriate under a velvety blanket of nacho cheese sauce. A crowning dollop of cool, creamy sour cream provides a refreshing contrast. At the same time, vibrant bursts of diced onion and fresh cilantro lend a zesty brightness to this decadent fusion of Mexican favorites.
While the dish is undoubtedly delicious as-is, I recommend making a couple of simple tweaks to elevate the experience truly. First, swap out the nacho cheese for a rich, tangy queso dip – the slight sharpness perfectly complements the birria's robust flavors. Secondly, don't forget to ask for a side of the restaurant's signature consomé, the flavorful braising liquid from the birria itself. Pour a generous amount over your fries, creating a sacred fusion of textures and tastes with each bite. Mix a blend of El Vagon's green and red salsas in a 1:3 ratio to add extra flavor and just the right kick. The resulting combination perfectly balances heat and tanginess, cutting through the dish's richness and ensuring your taste buds are left dancing with delight.
With bold, comforting flavors, El Vagon will become a staple in your dining rotation. Trust me, one visit to this unassuming gem, and you'll be...
Read moreFirst time I went for tacos de El Pastore, and birria ramen. I told the girl answering the phone, no pineapple and when I got home, my food had pineapple on it not a big issue, but still. That day I also asked for extra salsa because I love chili on my tacos. She also forgot that and the plate only comes with 2 little 1/4 ounce salsa cups which is basically nothing for those tacos.
Second time I go, I ordered the same thing and this time she gets it right with no pineapple. At the window, I specifically told her two times that I want extra green salsa for my tacos and chips and salsa with my order. Thinking that she would get it right I drove home without checking the bag And to my surprise, No extra salsa, no chips and salsa. Also they keep saying 10-15 minutes for the order but when you go 20 minutes after you place the order they ask you to wait an extra 10-15 minutes for it to be done.
In conclusion, the food is really good. They just need to pay more attention to getting the order correct for the customer. So when you take out make sure to give them plenty of time to make your order and double check your bag. I also don’t mind paying extra for stuff. They also need to accurately give a wait time for the food...

The reputation of El Vagón as having the best tacos in the area is valid!
Having heard of their scrumptious variety of tacos, we decided to finally sample them. We were not disappointed. Our small box order consisted of 12 tacos. Our choice of meats were the, al pastor, asada, and the birria. Inside the box, too, were all the fixings to put on our tacos (they don’t scrimp on these). Opening that box when my wife got home with it was like opening a gift on Christmas morning! THE FLAVORS! Rich, savory, succulent, flavorful…absolute delight!
We’ve discovered something here - this is better than ordering a pizza! Familia will be coming down from Burque soon, El Vagón Tacos are going to be on the menu for sure! We can’t wait to taste other items on the menu, tambien!
All of the staff at El Vagón were amiable, helpful, warmhearted and pleasant. I urge anyone looking for authentic tacos which have a flavor that is out of this world, to visit El Vagón. You can dine-in or carry out.
¡Gracias por la comida, El Vagón,...
