There are situations when people require time and exposure to truly appreciate a certain kind of culinary concept, especially if the concept is unfamiliar within their everyday culinary prowess. This is exactly what occurred with my initial experience at KoMex back on 7 Nov 2015. At that time, I thought the concept was cool, but I didn't think anything special of this restaurant - I was slightly biased with my Korean food...I expected my traditional white rice and a lot of banchan options while dining here. Fast forward to 25 Sep 2019, a bunch of co-workers were talking about eating at KoMex for lunch and I thought, "It's been a while, so why not?" That visit was remarkable, as it provided quality food and service. As a result, I decided to come here again on 5 Feb 2020 with another co-worker who had never tried a fusion-inspired restaurant. Once again, I enjoyed my time in this restaurant, and so did he. Fast forward again to 25 Feb 2025 (almost 10 years after my initial visit), my wife and I decided to have dinner here since her only experience was that 2015 visit which back then, she thought was only average as well.
I don't recall all the items I ordered during my previous visits; however, for the recent visit, we ordered the Spicy Pork Taco with Corn Tortilla, Bulgogi Taco with Flour Tortilla, Bulgogi Nachos with side of Guacamole and Sour Cream, Pork Belly Chimichanga, and Kimchi Fried Rice with Spam. Yes this was way too much food for just two people in one sitting, but I had the intention of enjoying their food for two consecutive days. One of the biggest takeaways from this business is how phenomenal their bulgogi is. Although I am a huge kalbi fan in the Korean food industry, I also know what good and bad bulgogi is...and this place's bulgogi far outshines other Korean restaurants' bulgogi that I've tried, which is saying a lot! Additionally, their pork belly was out of this world...it wasn't filled with an excessive amount of fat and was tender. Needless to say, their meat quality is astonishing considering what they charge you. The Kimchi Fried Rice was outstanding; I was glad that the main ingredient (kimchi) wasn't too old and still had a slight firmness to it. However, my only critique for that entrée would be to cook the spam longer (I prefer mine darker)...definitely not a show stopper either. If you have younger kids and feel they won't enjoy any of the food here (or are picky eaters), I noticed that they have a ramen station where they can prepare their own ramen - looks like fun entertainment for them, as long as you pay for the ramen of course.
One thing I never knew until my recent visit was that this business was featured on the Cooking Channel a while back with Chef Aarón Sánchez. That just brought a whole new level of expectation and appreciation of my time in this restaurant. We even got to talk to the owner since the restaurant wasn't as busy and it was towards the end of their hours of operation - very cool to hear the who's, how's, and why's from a businessman with respect to restaurant operations. I typically don't travel this far for tacos but, the fusion of Korean, Mexican, American, and Chinese... come on you gotta try it. The owners of the small restaurant are husband and wife. The wife was super nice and was always attentive and shared stories of how they started the business. And, the husband does all the cooking. Anyhow, business was good and people that were in and out were on a first name basis with the owners (that's always a plus). We started our meal with chips with salsa and guacamole. With the chips we were also given Chinese Zodiac place mats....only at KoMex (gotta love the quirks). Skimming the menu I started with a craving for the fusion tacos (Korean/Mexican) but, then I wanted a plate of noodles...LOL when does that ever happen if you're not at a buffet. We ended up getting 5 Bul-gogi (Beef) tacos and a rice plate with Daeji-gogi (pork). We were going to order more but the owner recommended that we didn't even though she could of just let us order. And she was right, the quantity was more than enough! On to the quality...the Bul-gogi tacos were filled with green and brown onions, pico de gallo, cilantro, lettuce and your choice of sauce. They brought a smile to my face. Also, the Daeji-gogi was so delicious! For me I have to have KimChi on the side as a pickled garnish. Anyhow, after finishing our delicious Korean/Mexican meal we ended our visit with a sliced orange and fortune cookies for desert. The only thing that I had an issue with was the location. I just wish this place was a little closer and they would definitely have a regular customer. My brother is coming to town at the end of the month and I love trying to impress him with food spots they don't have back in Chicago.
