
Although I've had Pepe's wonderful vegan creations at various pop-ups, the Farmer's Market, etc. I had never set foot in his Bistro! A recent menu enticed me, the stars aligned, and I got my husband to meet me for lunch.
I already knew I wanted the Quesadilla. This is not a usual order for me but the maple espresso roasted apples it contained piqued my curiosity! It was rich and savory, a bit spicy. The guac was extra yummy. My husband went with the Pita BBQ Tacos. He loves mushrooms and BBQ, perfect choice!
Menu changes weekly. Hours are sometimes extended and he does various events so check the Pepe's Bistro page. There is also a grab-and-go cooler with soups, burritos, and desserts. Namely his famous Avocado Cheesecake!

Read moreI only recently heard about Pepe’s Bistro through a friend and then saw their page on Instagram which intrigued me. I decided I needed to check it out asap. When I walked in I was warmly welcomed by the owner and was shown the menu. A cook quickly assisted me at the register and took my order. To my delight they had buffalo cauliflower tacos (I love buffalo cauliflower). $10 for four quality tacos with great ingredients. I work in a kitchen myself and frequently visit places where I feel there is no care or craftsmanship in their work unfortunately. My food here, not only looked, but tasted beautifully. The staff here is incredible, and Pepe personally came to talk to us personally, welcome to Nebraska (as well as talked to the other guests), and just created an altogether, incredible experience. I’ve eaten a lot of Mexican food, and I can truly say that the depth of flavors, and authenticity really shows, and the seasonal whole food plant based ingredients were perfect! From the art displayed, the support for the local schools, and even showcasing someone’s artisan hot sauces, places like Pepe’s makes the world a better place. 😊 I would 100% recommend it, and this is my favorite restaurant here in Lincoln right now.
