Stopped in on a Friday evening just traveling on the interstate. We did not have to wait for a table. The service was very friendly, courteous, and prompt. The menu was about four pages with typical fare and combos. I ordered the Rio Grande Enchilada- two rolled corn tortillas filled with chicken, red sauce, and topped with two sunny side up eggs, rice and beans. My overall impression of the meal was rather boring. Not that it tasted bad but it just didn't shake up my taste buds. I could not taste the corn tortillas at all. The chicken tasted boiled with little or no seasoning. The enchilada sauce was not spicy at all and had little flavor. The refried beans had a texture like they had been run through a food processor not mashed and tasted like they had been kept warm for quit a while. Some of the rice grains were crunchy and not very flavorful. The whites of my eggs were not cooked all the way. All in all not terrible but nothing to write home about. If you like very mild, bland Mexican food in a happy, clean restaurant you might be very happy. As for me, I am off to find some comida to titillate...

I am a HUGE fan of Mexican food. I lived in the San Diego area for many years. Mexican food was a part of daily life. Either made at home or in the plethora of restaurants that San Diego offered. So, now I live in Springfield and up until recently, it's been a struggle to find good Mexican food, that scratches that itch. Rio Grande, in Lincoln, will now be added to my short list of GREAT Mexican food restaurants. Our waiter, Steve was fantastic. I asked for his recommendations. Which he was happy to do. Our sodas were served in pitchers. How fantastic is that. The chicken Fajitas was tender, juicy and very flavorful. Back to Steve our waiter. He was hysterical. I tipped him $10.00 for...

The food here is amazing, better than the other Mexican places in town. They recently moved near the square in town, across from Sir Renna Tea. The people there are amazing and they have great customer service. Always attentive and honestly they are just friendly. My family and I go there every couple weeks for a night out. We usually always get the same two waiters and they are amazing and treat my family great. On top of that the food comes out hot and ready to eat and the smells fill the restaurant. Just typing this up has created an appetite for me and I could really go for some good authentic Mexican food! I guess I will have to hit up Rio...

So, now I live in Springfield and up until recently, it's been a struggle to find good Mexican food, that scratches that itch. Rio Grande, in Lincoln, will now be added to my short list of GREAT Mexican food restaurants. Our waiter, Steve was fantastic. I asked for his recommendations. Which he was happy to do. Our sodas were served in pitchers. How fantastic is that. The chicken Fajitas was tender, juicy and very flavorful. Back to Steve our waiter. He was hysterical. I tipped him $10.00 for the show alone.

In our opinion, Rio Grande is the better of the two Mexican restaurants here in Lincoln. What makes it better for us? The whole staff is exceptionally and consistently friendly, and provide good service. The food is always served hot. I don't mean that the plate is hot, but the food is hot as it should be when it is placed on the table. We love the colorful cheerful atmosphere and like the fact that there is no loud background music. We moved here from Louisiana, and we do find that the food is a little bit less flavorful then we are accustomed. Everything else considered, we enjoy every visit.

UPDATE- Just tried the chicken chimichanga and Wow. Mega Tasty. highly recommend. . Its Taco Tuesday 🤗🌮🌮. We stopped off at Rio Grande Authentic Mexican Cuisine & picked us up 6 crunch & 6 soft beef tacos. We both agree the soft are better. Had to teach dad how to eat a crunchy over a soft taco as a plate. I think next Tuesday we will try half beef half chicken soft tacos. The hot salsa was tasty but a little on the watery side for my liking. I'd prefer a hot Chunky Pico de gallo. Will have to go back and try some other dishes to see how they compare to my Home in Mexico
