Tucked away in the fairly new neighborhood of Fallbrook is a truly remarkable dining destination. SchillingBridge brews their own beers, fragments their own wines and makes petty much every menu item from scratch. The atmosphere is intimate without being pretentious, and the prices are just right. My wife and I visited on a special night for us and our sever went above and beyond to make it special. Andy was very prompt and attentive without ever hovering over us, and shedida good job of discussing themenu without pushing for an upsell. We tried a flight of their beers and a flight of there wines and were delighted by both. For dinner we had the western burger and the 10oz sirloin. The flavors on the burger melded perfectly to make one of the best burgers I've ever had. The steak was cooked perfectly to order and paired with a mouthwatering compound butter made in house. This sirloin was better than any I've had before, and that includes theones on my father's castle ranch. Read moreLast week we went to SchillingBridge before the NU tournament volleyball game. Previous experiences there were great, something was just off this time. We tried some wings with the Scottish Ale BBQ sauce, these were great! The berkshire ham & pork ball appetiser was sort of tasteless. We also shared the reuben sandwich and it was fantastic - though we did ask for ranch dressing on the sandwich in place of thousand island, and were charged extra for the ranch! Seems like an even swap? The salad that came with the sandwich was limp and wilted - didn't seem fresh. Lastly, after boxing up our leftovers we going to enjoy a couple more beverages before heading to the game, however our server just laid the check on our table without a word, so, I guess he thought we should leave..? Bottomline, the wings and reuben were terrific, a couple of the accompanying dishes missed the mark this time, and the service and minor charge for a topping change were questionable.
