Conspiracy Coffee Co. and Bakery — Restaurant in Mansfield

Visited from out of town and was greeted by the owner herself and introduced to everyone on staff! My coworker and I showed up a bit late to be served and felt terrible for popping in at close, but we were still warmly welcomed and walked away with a coffee and cookie each! By recommendation, we tried the coffee black (something neither of us would normally do) and we were pleasantly surprised with the quality and taste!! Upon reading the menu, we realized that the owner shops local markets and has traveled to find premium blend coffees for this sweet shop! SO COOL! I want to like this place, I really do. The first time i came here I was served by the lovely manager, Jamie. She got my order perfect. Ever since then when I go and am served by someone else, my order has NEVER been right. I'll order a chai, and get an espresso. I'll order a breakfast sandwich, which is supposed to come with avocado, and wait half an hour for it, just for it to have no avocado. My drinks will be made and it's 99% plain milk. It's comical how many times I have to come back to have my orders redone and fixed. The lack of consistency deters me and other customers from supporting this local...

Stopped here for breakfast while staying in the area- great food, incredibly friendly staff and delicious specialty coffees. Definitely looking forward to returning next time we're in the area!!

Service was not super fast, but I don't see that as a bad thing. (Translation: it isn't McDonald's- quality food takes time, so be patient because the staff care about the quality of what they're serving you.) Our drinks and meals were prepared with care and the staff communicated that it would take a little time.
