Today, 9/3/2025, was my first time eating at Penn to Paper in Midlothian. The day before coming, I looked at their menu online. I wanted The Big “D” Smash Burger, but some of the pictures and comments I saw people post on certain review websites made it seem like the burger would be dry. It’s been a while since I ate a burger from a restaurant, and I was really craving one. So I prayed and asked Jesus to give me the right cook to make my burger the way I wanted. When I finally got to the restaurant the next day, I specified that I didn’t want my burger flat and I wanted my meat well done. My burger came out great! It was so tall that I struggled to fit it into my mouth. The meat was well done and not dry. The pickles, onions, cheese, and sauce were wonderful. The cook did a great job, and Jesus for sure hooked me up! The fries were an extra cost and they were bland. Even though they were sprinkled with seasoning, I hardly tasted it. I added a picture of the 2 meat plate of brisket and sausage that I ordered to-go for my sister. Also, my mother had ordered the salmon tacos, and she enjoyed them. The salmon was chopped into small pieces and sat atop some cole slaw. The amount of salmon for each taco was very generous. The salmon practically filled the plate and spilled out of the tacos. The order comes with three tacos, but they’re kinda small. If you’re hungry, I’d suggest you add a side with them. They also offer desserts and have a separate menu for them, so be sure to ask about it. Overall, the food, the ambiance, the staff, and the lemonade I ordered were all great.

Love the atmosphere! Old brick building serving quality BBQ. I ordered the (3)meat plate which consisted of: Sliced Brisket, Burnt Ends, and Pork Ribs. It came with two sides which I chose their Beans and CornBake. Sliced Brisket- I requester Fatty (point) brisket. It had a great bark and was cooked perfectly. The fat was rendered well and was very moist. Burnt Ends- These were traditional Kansas City style brisket Burnt ends. The sauced used on them complemented the meat well. Pork Ribs- This was a bit of a surprise for the area. They served baby back ribs, instead of St Louis cut. The ribs were super tender and rub had a hint of chili flake which was a good surprised. I paired the ribs with their house spicy BBQ and they were great. Cheesy CornBake- It was very tasty! They use 6-cheeses and jalapeno and it is baked like a casserole. It was very tasty and I enjoyed it alot. Beans- Their beans were some of the best I have ever had. Pinto Beans slow cooked with the right amount of spices and sauce. It did have some chopped brisket mixed in which was a little extra bonus to the beans. Overall: Great find if you are wanting BBQ outside the metroplex that is good enough to give the big guys a run for their money. The staff were super friendly and welcoming and the food did not disappoint.

Penn to Paper is the perfect elevated dinner date night spot that still somehow maintains a low-key atmosphere. We have visited about four times now since the restaurant changed to Penn to Paper, every time was a great experience! For lunch one day, I had the Cuban brisket sandwich with a side of fries. Sandwich is perfectly toasted Texas toast, with chopped brisket, pickles and a yummy mustard sauce. The brisket was very juicy, and the helping of brisket is generous and spills out on every bite. We’ve gone to dinner a couple of times here, and the vibe is sophistication meets chill. Dim ambient lighting suits the designer looking furniture and cocktail lounge in the back. Last night they had live jazz music, which was awesome. We tried the chicken fried brisket (a little dry, but to be expected when frying brisket) with very creamy mac and cheese and crispy fries, the pimento brisket sandwich (SO GOOD) and tempura brussel sprouts (they were a little soggy), and our mixed drinks were top notch. The staff is always very friendly, and we have received great service even on very busy nights. This will definitely be one of our weekly date night rotations in the future.

Went to dine at penn to paper for the first time since it changed from the barbecue joint. Bottom line, the barbecue joint was better, the food may have been expensive but it was a better experience.

Informed by friends that the current menu was fantastic so we brought out of town guests with us to eat.

We started with chicken Wings which were way overcooked and dry. At the table we ordered 2 pork chop plates and one medium rare steak, not cheap. Both pork chop plates were delivered overcooked and very dry. The sides of macaroni were good.

The steak first arrived late and far after the pork chops and was cooked to well done not medium rare.

During this time the owner was standing next to our table talking to a friend about "expansion and growth and improvements". I think you need to look within and fix the current issues before you expand. The owner did not think to inquire why the service manager was called over to our table a minimum of 4 times.

The replacement steak took so long to be delivered to us that we paid our bill and we're going to take it to go, it was delivered to us rare and bloody and it was taken off our bill due to the above mentioned issues.

What made it worse was that the environment is so very loud and it was extremely hot in the dining area with little to no air movement for 2 hours.

Bottom line, a cool place to get a drink and maybe listen to a local artist but if you want "fine" dining which they are attempting to bring to Midlothian, do...

My husband and I came here for date night on a Friday night and it was an all-around amazing experience.

The atmosphere was fantastic. We loved the modern decor with Midlothian history weaved in (1960s news articles from the Midlothian Mirror were on the walls). I also loved that it felt upscale but everyone wore comfy/country/casual attire.

The music was absolutely fantastic. There was a guitar player killing it in the back. We moved to get closer.

The drinks were delicious. We got an ild fashioned, frozen marg, and The Midlo Club, and all looked classy and tasted great.

The food…wow. One of the best in Midlo. My hubby got the chicken fried brisket - delicious! Not only was the brisket itself so tasty, but the jalapeno gravy on top was meah chefs kiss. I had the Smoky Cuban, which had brisket, pulled pork, swiss, and mustard. Best twist on a Cuban I’ve had - that brisket was amazing.

The servers were really friendly and amazing. My o ly complaint is that they were short staffed, but they warned us as soon as we sat down so we had the option to leave if we didnt want to wait, but we had time and stayed, and I’m so glad we did. Service was otherwise great.

Overall, this is a place we’ll be doing regularly for date nights now and when friends/family visit from out of town. We liked it even more than The Porch Pour - with a...
