Gordo's Bubble Waffles: Located in the heart of Bay View (with a second location on the Marquette Campus), this trendy ice cream shop boasts not only a variety of ice cream scoops, but also their famous "Bubble Waffle" sundaes. The shop itself has a fun and welcoming atmosphere with friendly employees, striking artwork, and contemporary music. Although there were quite a few sundae options I would like to try, the one that stood out the most was their "Cookie Monster". The Cookie Monster is a scoop of cookies n cream ice cream topped with crushed OREOs, whipped cream, drizzles of Nutella & icing, all wrapped in a Bubble Waffle. I was immediately enthralled by the size and beauty of my sundae. To begin with, the crushed OREOs were not just a sprinkling of cookie dust, but almost entire halves of OREOs. Not purely for aesthetic purposes, the drizzle of Nutella and icing packed more sugar and flavor along with the light and fluffy whipped cream. Taking my first bite, I was startled to discover that the Bubble Waffle was still warm! In retrospect I probably should have expected that, but I've never had a Bubble Waffle and I was anticipating it to be similar to a waffle cone. The freshly made Bubble Waffle is not only warm, but soft and chewy with a slightly buttery flavor. Honestly, the contrasting temperatures actually works pretty well, other than the fact that it gives your dessert a short life expectancy due to the melt time. This brings me to my only two cons, which are both just personal preferences. First, you have to eat it quickly and I prefer to slowly savor my food. Second, I'm kind of frugal (I struggle with justifying $5 for Crumbl) and at $12 it is a bit pricey (ice cream scoops seemed on par with other area ice cream and custard shops though). The food is great although it’s nothing crazy just all bought in toppings and such, the price might be a bit steep but they usually load the waffle up so no complaints there. However the big complaint I do have is the customer service. This place has arguably the worst customer service I have ever seen. We tend to come later with in their last half hour of service and every time without fail they have an attitude about when they close and always try to close early, which I get they all just want to go home. However open till 11:30 means service till 11:30. Tonight that was not the case. We came in at 11:20 placed our order and thought everything was normal as they were giving out waffles to DoorDash pickups and other customers, but then after waiting for 20 minutes we were informed that they shut their machines off before we even got there. Which I don’t care if y’all close early but it was really disrespectful and rude to us to make us wait 20 minutes watch everyone else get their food and then get told we can’t have ours because they closed the machines 15 minutes early. I would’ve rather just been told they were done for the night. But also as a place where the bubble waffles are your specialty maybe don’t turn the machines off early. Lastly not that it directly effected us be we also watched one of the workers spray chemicals towards someone waiting for a pickup and made them move their personal belongings in order to wipe the counter they were sitting at. Let me start by saying—I drive over an hour one way just to eat at Gordos. That’s right. Sixty full minutes of contemplating my life choices, dodging 414 drivers, and blasting Conan's new podcast with my best friend , all for one glorious reward: a bubble waffle that tastes like it was handcrafted by Zeus himself. These are clearly rare treats.
But these aren’t your average bubble waffles. No, Gordo's is out here redefining what a waffle can be. These things are savory, artistically topped, and mind blowing —in the best possible way. Every bite feels like a flavor explosion orchestrated by someone who clearly has a PhD in Deliciousness. The combinations they come up with are so unique, I’m convinced there’s a culinary wizard locked in the kitchen casting spells on the menu, but don't worry- you can see the entire process from a nice leather couch.
And if the savory treat doesn’t already have you swooning, wait until you meet the staff. I swear they’ve hired the entire Greek pantheon. Each time I go in, I’m greeted by humans so attractive you might forget how to order.
The atmosphere is warm and welcoming, the plating is next-level Instagram-worthy, and the vibe is just unmatched. Gordo's isn’t just a restaurant—it’s a destination, a craving, a full-blown obsession.
So yes, I will continue to drive an hour for Gordos. I’d drive two. Honestly, I’d fight a minotaur if it meant getting first in line. Just go. But please—don't eat all the biscoff ones....
