Who Still Doesn’t Know About New Jersey’s Hidden Gem Restaurants?!

Dinner for 2 on a Saturday night. The specials, hamachi crudo appetizer and halibut entrée were exceptional. The creamy tuna was sliced thin and served with avocado and a citrus base. The nicely-portioned halibut was perfectly cooked and accentuated well with a light saffron sauce. Both were extraordinary. We also started with the gougères, which had good comté flavor. While tasty, they were not as airy as expected, like a profiterole or popover, but that is a very minor nit to pick. The other meal was the grilled octopus/lentil appetizer and beef duo entrée (oxtail and grilled bavette, served rare, as requested). Both were prepared very well and adequately sized, but the flavors were not as inspiring as the seafood specials. The beef dish, which was served with spinach in a horseradish flavored sauce, would have benefitted from one more accompaniment. For example, grilled asparagus spears, carrots, or sunchoke -- just a little something extra on the plate to add a bit of variety to balance the heavy dose of meat. Shared dessert was the blueberry vacherin and the flavor was to die for! Our only complaint was the thickness of the meringue shell – sides and bottom. Perhaps a delicate sponge would have allowed for more of the delicious filling, of which you simply cannot get enough. The whole meal was paired with a Figgins Family Toil chardonnay (due to the predominance of the seafood), which was excellent. Overall, the food quality and portions were very, very good. Now for the major complaints… The background music was a very odd selection of classic rock, e.g., Led Zeppelin and Joe Jackson/William Shatner (an obscure cover of Common People); the point being the style and volume only added to the din of the dining room, which is quite loud when full (as it often is). To these ears it just seemed an odd pairing for fine dining. However, the main complaint was with the meal pacing. Guests were very clearly pressed to eat and get out – there’s a second seating coming right behind you! We were seated at 5:40 and the bill was placed on our table (with dessert, but without being requested) at 7:00. A couple arrived next to us as our appetizers arrived and they completed dinner and dessert (without appetizer) prior to us. We DO NOT recommend the early seating if you want to dine and enjoy pleasant conversations in a relaxed atmosphere. On the other hand, if you are heading to a performance with a 7:30 or 8:00 curtain, have no fear – Faubourg will see to it you are out the door. However, there is a big difference between dining and just eating.

I was fortunate to visit a really cool bistro in Lebége I have not experienced any restaurant that comes close...until now. We were hesitant because of the extreme reviews of a new restaurant and our own experience with "new places" that are often just an illusion. I can honestly say this indoor/outdoor clubby bistro Fabourg is da bomb! You will want to leisurely experience your meal, don't rush any portion of your meal as it deserves full attention. I had it on good authority that even the humble bread was made by an ever vigilant meticulous patissier. The adventure began with the tarte flambé.Thin dough that might have been phyllo, might not and who cares it's phenomenal!! Topped with fromage blanc and both thinly sliced translucent onions and lardons. My guest enjoyed the Snails and chicken oysters Fricassee. This dish provided true Joie de vivre! (been waiting to use that one) The flavorful and tender chicken oysters and rich snails are a hearty combination that is best enjoyed with a lovely flute of Vouvray..because why not. A main course of Duck Rhubarb was served with broccoli rabe and turnip gems. The presentation of this dish alone is exciting. The duck was prepared at a tender medium and seasoned to perfection. The Rhubarb cubes were distinctive and sweet, both this and the broccoli rabe were firm and tooth tender. Paired with a light and uncomplicated Lulami Pinot Noir. The second main course: Beef Duo bavette ( flank) and oxtails served on a bed of spinach and a delicate soubise sauce.This really brings together the dichotomy of both meats. We paired it with a pretty angular Rhone Valley red blend perfect for this luxurious dish. At Fabourg you will enjoy one of the most beautifully chic settings that offers ultra sumptuous French cuisine served by attentive ever correct and knowledgeable team of professionals.

Nice ambiance, decent service, disappointing food. We were a party of 4 celebrating Valentine’s Day on Friday night. They were full to capacity and we liked our table tucked away in a corner. The wine list was extensive but I didn’t think the options were good so our waitress made a recommendation for the red and we choose a white. Both were just ok and tasted like cheap wines. Because it was French cuisine we suspected the portions might be on the smaller side, so we ordered 6 starters to share. Everything was bland; soup was watery, the tart was not a tart but a flatbread, the baba ganoush tasted like hummus with eggplant, shrimp cocktail had no flavor, and the lump crab was on a bed of arugula with bland hearts of palm with 2 small pieces of citrus in lots of oil. We were excited to see Coq Au Vin on the menu, so we had 2 orders, one person choose the beef duo and to play it safe one roasted chicken. The coq au vin was either made with very little wine or the wrong type and the chicken did not taste fresh. Heavy on the lardon but none of the classic ingredients to be true to the dish. The beef duo had a thickly sliced flank steak rendering the steak too tough. The roasted chicken was boring. Both desserts chosen were boring and they did not present as described on the menu. What a rip off! Overpriced food that wasn’t French in the least and no integrity to the food. It looks like everything was thrown together and I question if a “chef” was even in the kitchen. If you’re a foodie pass this one by.

Dining at Faubourg was a pleasant experience. I had weekend brunch on the top floor of their covered patio area. Service: From the moment I arrived at Faubourg through the entirety of the dining experience, the staff was friendly and provided with very good service. I was greeted by the manager at the door and seated immediately (I had a reservation). The wait time to order was a bit slow but once we ordered, the food came out quickly and the waiter checked on us throughout the meal. The staff did not feel pushy and despite staying several hours I did not feel rushed to leave. Ambience: I really enjoyed dining in the patio area. I highly recommend getting a table on the second floor overlooking the restaurant (perfect for a small party of 2-4 people). It was well lit and felt very open. It was peaceful and serene. This is definitely an excellent place for brunch. Food: The food was very good. I decided to do the $36 Prefix Menu. To start, I ordered the Tropical Parfait (chia seeds, coconut, gogi berries). It was light and refreshing without being overly sweet - 4 out of 5. For my main, I ordered the French Toast (blueberries, almonds, maple syrup, whipped crème fraiche). The FT was not large but it was filling. The bread was delicious, crispy, and tasted like it was freshly made that day. It was beautifully plated and paired well with the almonds and blueberries. Overall, the dining experience at Faubourg was wonderful and I would definitely return again.

Updated review: I can’t believe that my favorite restaurant lost a star from me, but it happened. Last year, they split our plates, and had far more sauce on every plate than this year. The food seemed more memorable this year, and the grilled octopus just tasted completely different. I’m a little disappointed that the scallop truffles didn’t reappear this year on the Valentine’s Day specials menu, because that is the most incredible dish I’ve ever tasted. Tuna tartare was bland. Crab salad was certainly the menu highlight. Barbajuan needed a sauce or cream or something because it lasted like a spinach empanada, and was a very small portion. Wine glass selection was ok.last year for our anniversary we had macaroons, this year our server didn’t give it to us. Old review: This is THE BEST food, atmosphere, and service that we have both ever had in our entire lives. Especially the sea scallops and black truffle, the dish was mind blowing, quite literally the best dish of my life, it stands above all of the others. The mushroom soup, oyster, and octopus were also phenomenal. To top it off, they made our anniversary special from start to finish. They pay attention to every detail, they serve you the next meal as soon as you finish, hot fresh and ready. The servers were awesome, Konrad was our main server and he was great. This restaurant deserves 6 out of 5 stars in my book.
