We were driving through Monte Vista after spending the day at Great Sand Dunes National Park on vacation. I wasn't hungry, but my sonwas starving. I was very skeptical about eating Thai food in a small town in Colorado because where we're from, there is an abundance of great Thai restaurants. I was pleasantly surprised! My son had the massaman curry, which he said is probably one of the best ones that he has eaten. He has travelled to Thailand several times due to his job and eats at high-end restaurants as well as street stalls, but said this one was up there with the best. I had the tom kha soup, which was delicious. Instead of Thai chili, it had jalapenos, but maybe they aren't readily available out in the middle of practically nowhere. The soup was delicious and very flavorful, a tad salty for me (I try to stick to a low sodium diet, so most everyplace I eat is too salty), but my son loved it. The food temperature was super hot, which I liked. The ambience was like a small town family restaurant. Service was very good and friendly. There seemed to be a lot of regulars dining in because the owner asked if they wanted the usual. I'll probably never go back to Monte Vista, but if anyone does, please try this family restaurant. The Thai flavors are bold and authentic, and the ingredients are impressively fresh—from the quality of the meats to the sliced tomatoes in the sauces.
I especially enjoyed the Thai rice with small fried pieces of pineapple. I’m usually not a fan of pineapple in savory dishes, but the tropical touch really worked here. And the Thai Tea? Perfection. I’m quite particular about it, but this one had just the right balance of flavor and sweetness.
