Panchos Tacos Mount Vernon — Restaurant in Mount Vernon

Pancho's Tacos is my new go to Mexican place in town. We came here for a date night and it did not disappoint. The chips and salsa were excellent and bottomless. My partner said he could drink that salsa it was so good. Lol. I got the rice bowl dinner with chicken. It was huge! I don't think I ate half of it. Every bite was delicious. The veggies were fresh and full of flavor. I added brussel sprouts and they were phenomenal. I can't have cheese so I got salsa verde on the side. That was also delicious. My partner had the brisket tacos. These were equally full of flavor. The brisket is truly good.

Our server, Brooklyn, exceeding our expectations. She was kind, efficient, friendly, helpful, and quick. We never wanted for anything. She even walked us over to the salsa bar to show us different sauces we could try. I am excited to go back to try more. Brooklyn suggested a Margaritas flight which sounds fun. Overall, a fantastic experience with both the food and the service....

So tonight on doordash ordered the Mexican street corn and the birria tacos, the birria tacos were soggy, which kind of ruined my enjoyment for them, but the corn was on point. The birria tacos flavor came from the onion and cilantro, and the broth you dipped it in, but otherwise kind of bland so it could use some improvement, but still ok for it being soggy, I could only eat 1/4 because of it being soggy. I have, however, tried their shrimp taco when it was just the food truck before they opened a location, and that was absolutely delicious. May try dine in one day, and hopefully, the birria tacos would be better, so I'm not completely...

Don't get me wrong. I love Pancho's tacos. I was so excited when they were coming to Mount Vernon, but the two times that I've been there have been super disappointing. The first time my fajitas came out and they were burnt to a crisp the second time My wife and I went with a couple of friends waited over an hour and a half for our food. When the food arrived my wife's cheese quesadilla wasn't even cooked. The cheese wasn't even melted inside and they had to redo it two times. I just think from now on until they figure everything out I will be driving to Belleville...
