Server/bartender of 10 years here. Saturday night for 3 adults. 630 arrival, told 35 minute wait, turned into an hour and ten minute wait but that's okay, we expected to wait. Went to the bar to get a drink while we waited, asked the bartender if there are any Stout or dark beer, bartender replied she did not know and handed us a menu. (Opportunity for employee training here)
Waited in the game room to be seated. Could use a couple high top tables and chairs - guests were putting their wine glasses on the floor and that is an opportunity for disaster with corn hole in the same vicinity.
Sat around 745. Tables were beginning to clear. Server was Delaney. Food menu given but no specials or soup specified also no drink/beer list menu given(missed opportunity). She took our drink orders 2 beers 1 margaritas salted rim. 10 minutes pass no beverages. Put in appetizers 2 orders of meatballs yummy and the queso dip - also yum. Appetizers came out before beverages. Water being offered would have been nice since the food was piping hot and again delicious. Beverages took 20 minutes to come out. Beers weren't what we ordered - I can tell Sam Winter from Thames River Red. Margarita was fine however...rimming your glass with Roses lime juice for the salt to stick to makes your salt sweet. Opt to rim with fresh lime juice so the salt stays salty please 🙏. Buffalo wings were plump and just spicy enough Black and blue burger was delicious, good fries. 10 Oz strip tender but one side was well done and the other very rare - could stand for a more even cook but again was tender and seasoned. Also if you're serving alcohol - you should also be offering/pushing water it's the responsible thing to do.

I have been eating at this establishment since they opened in the trailer. I've introduced a lot of new customers to them over the years because of how good their pizza WAS. This review isn't to bash this business. I'm praying the owner (John) takes this into consideration because I want them to succeed.
Ever since they moved into the building the pizza quality has gone completely down hill. I know there are some growing pains moving into a new building and creating an entirely new menu. But lets not forget what got you there in the first place, the PIZZA!
When they were in the trailer the pizza quality was always on point and consistent. The toppings were plentiful, made exactly as their menu describes, and you were lucky if you could finish half a pie. Their pizza then was second to none.
Now everything is different. Their crust isn't the same, the sauce is now super spicy, they skimp out on toppings, or they're missing altogether. The last time we dinned in, I ate an entire pizza and was still hungry, which in the past was an impossibility. The last time we ordered take out, we got a pizza that was cold and had been sitting for awhile.
Would love to see the same quality of pizza get better. I hope you guys can figure it out before it's too late because were all...
Read moreMy family and I were on the way to Colchester CT to see extended family, and pulled off in Norwich searching for a BBQ place we once visited just off the highway. Sadly, that place has fallen victim to capitalism and is no more, but we had the good fortune to stop in to Brick & Basil.
The ambiance was a little weird, they were playing dance/house music, which seemed a little strange for 3:30 on a Saturday, especially based on the other clientele there at the time, but the menu was fairly robust and I was happy to see interesting choices in pizzas (in addition to the old standby of DIY a pie).
We ordered the "Pig and Fig", a buffalo pizza, and a custom with grilled chicken.
All three pies were absolutely delicious. I love a good wood fired pizza and the crust was perfectly cooked to that slightly charred, bubbly goodness.
Minor critiques? The pig and fig could have used a lighter hand with the arugula, but it certainly didn't detract. Other than that perhaps a filter on the water, my iced tea tasted a little chlorinated, likely by virtue of having used utility provided water to make it.
We wound up taking a couple of slices of the pig and fig with us, and it was as delicious cold at 11 pm as it was hot and fresh at 3:30.
We'd happily return and sing Brick & Basil's praises to others, and who knows, maybe they're out new go-to when we next pass through.
