We like to visit restaurants twice before making a final decision on whether it will be a favorite. We visited Copal two weekends in a row after enjoying it so much the first time. We have tried birria tacos, steak tacos, chicken quesadillas, los verdes, taquitos, churro dessert, and the strawberry tres leches cake.

The birria tacos are fantastic. They are our favorite from Omaha. You must use the consume for each bite though, or you may find the salt profile lacking. We felt the same about the taquitos. The salt was perfect if dipping in the queso, but lacking on its own. The queso is DELICIOUS! The quesadillas are the best I’ve ever had. The steak for the tacos is moist, not dry. That is the same for all the meats. If you love margaritas, the mango margarita is delicious! We typically don’t get dessert at restaurants because we are too full. We were full, but churros are too good to pass up. These churros come in an ice cream and cream cheese combination that is perfection. The tres leches cake is very good if you like that type of cake. Two out of four in our family liked it.

In addition to the great food, we had wonderful service all around. The servers were kind, helpful, and very attentive. We had our food within 5-6 minutes of ordering, but we enjoyed the complimentary warm chips with salsa during the short wait. If you are looking for a great Mexican restaurant, you can’t go...

We discovered Copal a few months back after reading all of the rave reviews on online groups. The rave reviews were legit!! Our favorite waitperson is Dulce, she is so professional and so attentive that you never have to ask for a thing she somehow magically reads your mind. Or she makes sure it’s on the table before you even have an opportunity to ask! Abuela, came to our table last night and urged us to try the churros for dessert. I thought I was going to get the Tres Leche cake (I’ve ordered it before and know that it is excellent), but when we heard that Abuela makes their churros fresh — we were in! We decided we could’ve had several orders of just churros last night and been more than happy🤪. But we had fajitas: I had shrimp and my partner had chicken. The churros melted in our mouths and the fajitas? Well, there was not one sliver of green pepper or onion or one shrimp left! If you’re ever looking for a brunch location, their brunch is stellar. Copal’s Brunch could compete with anyone’s! You simply cannot be disappointed here. It is on our list anytime there’s a potential of going out to eat these days. This is the first time my wife and I have been to Copal. A friend of mine posted some pictures of their dinner from Copal on Facebook and it looked so good we had to give it a try! The service was very good and the food was awesome. Probably the best Mexican Restaurant we have been to in Omaha this far. We started our evening with some Chicken Taquitos and my wife had a Margarita! We were also served chips and salsa to eat while we waited. The salsa was awesome! Great flavor and the right amount of heat to enjoy! The Taquitos were so good and were served with a guacamole salsa, pico, and cheese dip. For dinner my wife chose the Crunchy Ground Beef Tacos and I went with the Steak Tacos! These little guys packed some awesome flavor in each bite! I loved the simplicity of the steak tacos with steak, cilantro, and onion. I was just missing a line wedge to squeeze on top!

We were very impressed with the flavor and the service. To top it off, the price was very reasonable! Compared to other Mexican Restaurants in town, Copal tastes way better and priced according! We would highly recommend! We will definitely be back! May even make it a monthly visit!!

Although there was a 30 minute wait, there was room at the bar and we were given the option to order and eat there. We chose to wait for a table. The atmosphere was nice with soft lighting and Mexican music playing softly. Conversation of patrons was a bit loud, but that could be from the amazing drinks. We ordered the cucumber jalepeño, the mule, and the house margarita. If you like strong drinks bursting with flavor, this is your place. The carne asada was flavorful and juicy with cooked to perfection onions and jalapeno strips. I've never had mashed potatoes with Mexican food, but these were homemade and delicious. The beans had a flavor I didn't particularly like, but the guacamole was smooth and increased the flavor of the asada. My boyfriend had the chicken Huarache and also a shredded beef Huarache. Chicken was moist and the flavor was superb. I didn't try the beef, but he said it had a bit of a barbeque taste to it but the Chile was good with just the right amount of spice. Served with his Huaraches was a salad of spring greens and apples with a sweeter dressing. He also said that had a great flavor. A tad pricey, but totally worth the money and the wait if you go on a Saturday evening.

I know Omaha Restaurant Week has come and gone, but I've finally found the time to drop a review! I've been to Copal several times, and have always had a pleasant experience. The atmosphere isn't quite "warm and inviting", but you don't really expect it to be either. My ONLY complaint, is that it's hard to snap good quality photos when you're being blasted by neon colored lights LOL. To start things off - the spicy cheese dip is incredible. It has the perfect balance of spices, and like the menu states, it's "not so spicy". I chose the Cochinta Pibil Panucho and my partner snagged the Birria tacos. I will say, the first bite I took of my Cochinta must have had a whole spoonful of "mayan seeds" or maybe an entire pepper because I ALMOST DIED. Luckily, the spice came down quite a bit as I continued to eat through it, I was worried there for a second! The start of the show though, the true MVP, and the dish I will forever order when I return, is the Stuffed Churros. The tequila ice cream was cool and refreshing, and the "white creamy sauce" was incredible. Do yourself a favor and don't leave without ordering this. Can't wait to go back!
