Bird's Egg Cafe — Restaurant in Palestine

My family and I were in Palestine for a football game over a month ago. We spent the night and found this little treasure of a restaurant. We walked from our hotel room, not knowing that we were about to step into a hometown hotspot. Everyone knew each other, some were obviously regulars. The owner has taken her time to decorate and display lots of country rooster and hen decor that greets patrons with a cheerful “Good Morning” when you walk in the door. Friendly, smiling, joking waitstaff to welcome you, offer suggestions, and refill your bottomless cup of coffee or sweet iced tea. Cindy, our waitress, was an absolute joy. The food: eggs, bacon, hash browns, buttermilk pancakes, and cinnamon roll, did not disappoint. If you are in Palestine, I highly recommend this cafe’. Food +Typical dinner food, and that's a compliment. I'm very picky with pancakes, and they were really good.

Service +Family owned and operated. They were very attentive, on top of service, and busy.

This place deserves 5 stars on the atmosphere and food alone. However a couple of the waitstaff couldn't be bothered to check up on people. They literally (not joking, this actually happened) lay down in booths while customers are a table away. There is a lot of eye rolling, and huffing, when told by what I am assuming is the owner or manager. My wife had a hole in her glass of tea, and instead of giving her a new glass, the young gentleman halfheartedly wiped it up as it dribbled out.
