Being Texas born and bred, the privilege of experiencing world class barbeque was just a normal occurrence in my years as a resident in the Lone Star State. But with subsequent moves to the Carolinas and to Florida, the quest to find truly spectacular barbeque was met with dismal findings over the years.
But now in Palm Beach Gardens, Florida we have salvation, we have something to celebrate, something to savor that meets the criteria of smoked meats delivered with a passion for culinary excellence.
NEVS BARBEQUE, on Alternate A1-A, has their official Grand Opening on Monday, November 28. But I was one of the honored few to sample their offerings while they were involved in set-up and training.
I have sampled the best from Black's Barbeque in Lockhart, Salt Lick south of Austin, Rudy's BBQ (created by Phil Romano of Fuddruckers and Macaroni Grill fame in Boerne, TX.), Terry Black's in Austin and the standard County Line. I have not experienced Franklin's BBQ yet because I do not go stand in a line before dawn to snare their world famous brisket.
Now in Palm Beach Gardens, there is an across-the-country-rival to challenge these icons that have elevated the standard of smoking beef, chicken, sausage and pork.
Brisket smoked for 12-16 hours, smoked chicken, house-made smoked sausage, and all the sides – if you did it right, you’re in a meat coma by the end of your meal.
Did I tell you that owner Tommy Nevill has a smoker that handles 700 pounds of quality meat at one time? Did I tell you they load up the rotisserie at 8:00 PM each evening for the slow smoked, so tender you can gently-cut-it-with-a-fork Texas style brisket that is nurtured to perfection for 10-16 hours before serving the next morning?
Did I tell you the 3 different original recipe sauces with Original, Texas Hot and Carolina should be purchased for an at-home staple?
Did I mention the house made cobbler and brownies?
The smoked tomato and Vidalia onion vinaigrette salad dressing?
And the coup d'etat: the most delicious corn dog you have ever tasted with Wagyu beef mixed meat in the wiener.
One incredible company policy. There is no limit to the number of times you can go experience this new place for best barbeque!

We moved to FL several years ago, and we have been desperate to find a legitimate BBQ restaurant. NEVS is the real deal.
The location isn’t great. It’s in old PBG, and in a tired shopping center. But the trip is worth it!
The ownership is fantastic. They are interested in your thoughts, and want to make things better. They take serious pride in the cleanliness of the store, and they are clearly very proud of their food. When I said “I don’t usually get baked beans”, they insisted I try. Thank goodness I did! Their brisket infused baked beans are the best I have ever had.
The BBQ is classic BBQ. Nothing fancy in the output - no silly gimmicks - just the real-deal BBQ. The focus is on the quality of the meat. I have tried everything on the menu at this point, and there isn’t a single thing that disappoints.
Of the meats, my favorite us usually the brisket, but don’t pass on the pulled pork or chicken. Both are truly pulled, in large chunks. The sauces are properly on the side, and all are good. The cole-slaw is a nice vinegar based slaw.
The atmosphere in the restaurant is perfect, and works like Chipotle. Enter to the right, get in line, and tell them what you want. You get to see it cut, and put on your tray. You pay at the end. Go to your table with the sauces on the table, and the conveniently placed paper towels (which you will use over and over again). Prices are VERY reasonable - we were super thrilled to get the quality of food we did for the prices paid - particularly these days in South Florida.
I am just so happy to have NEVS in town - even if I have to drive 20 minutes to get there. We are going to use them for all of our party needs too, as we saw a bunch of party trays going out of the restaurant.

Nevs is hands down in my Top 3 best BBQ restaurants I’ve tried. I am from the south, so I have had a lot of great BBQ.
First and foremost, the establishment was clean, even the bathrooms (which I appreciate). Every food item was fresh. My guest and I tried the Prime Brisket Burnt Ends, Cracked Pepper Sausage, Potato Salad, Pickles, Mac-N-Cheese, and Cornbread. Everything was a 10, aside from at least half of my burnt ends being fatty pieces. For the edible part that was not fatty, it was very flavorful and my favorite.
My only complaint is that the gentlemen that was helping me was in such a hurry, he did not remember I ordered baked beans. Additionally, he rung me up so fast that I was not able to sign up for the loyalty program. There was one customer in line behind me. I waited until this customer was helped and I then asked if he could enroll me in the loyalty program and his response was I would have to wait until next time—he was not able to do so after the fact.
As a business owner, I know with Square you are able to manually input a customers information by selecting the sale. I would assume Toast operates similarly. This experience with this employee was a little unfortunate, but I won’t let it stop me from coming back. My advice for this employee is to slow down.
I love that Nevs makes their own sauces—each being so palatable. I also appreciate the “to-go” station they have easily findable so I don’t have to ask an employee. Did I mention how clean the entire restaurant is kept? It’s worth a second mention.
