Just another IPA Brewing company.
To start this off I will mention, this is not a bad review for Fate Brewing directly but my experience there was the last straw for me and something that needed to be said. This review could more than likely be applied to most of the other breweries that extremely disappointed my non-hop loving taste buds, however Fate is all hype.
Someone extremely special to me who had enjoyed this place before, thought I should try it for the first time. I love Irish Reds which are hard to find in Arizona so I have been wanting to try it. That said there ARE people who appreciate hops... however after tasting all their non-IPA beers I am sad to report it is just another too-loud warehouse hop bandwagon want-to-be hipster Arizona brewery riding the coat tails of great branding, a large budget, and a penchant for making all their beers taste like an undercover IPA. "Thats what everyone likes" she said.
Well, this review is for those of you who are not everyone, do not like hoppy beers, and actually enjoy the flavor of fermented grains. This fad of relabeling an IPA as every other single style of brew needs to end. The beers I tried non-labeled as "IPA" tasted overly hoppy, barely different colors with almost a non-present note or flavor profile distinction. Few of them actually tasted the exact same. But the audacity to call that an Irish Red was the most audacious, kilned malts and roasted barley not present whatsoever, color wasn't even close just slightly orange hop water. After trying 7 of their overly hoppy beers I didn't even want to try the stout, my assumption was that I would not approve. The Barley wine was acceptable and seemed to be close to what you might expect so I will attribute the forced one star to this, it was tasty. But if you know beer, and go thinking you get to try "different" beers, you will be sadly mistaken. The brewing process I would imagine is just slight flavor and color variations of the India Pale Ale. If thats your thing "HOP" on in, this is the place for you and anyone else who does not understand the required flavor profiles and why they matter in relation to how you label a beer correctly.
Beers are a combination of fermented grains, malts, herb, fruit or vegetable extracts. Different recipes of above produce the flavor Historically hops were only introduced in the brewing process to act as an anti microbial agent when fermenting grains, at a time before refrigeration, steam pasteurization, or hermetically-sealed processes to kill off harmful bacteria and fungi.
Sure, recipes and flavors and taste buds are all subjective and I want to absolutely touch home that personally I do not like hoppy flavors so yes at the end of the day anyone can have their own interpretation of something and call it whatever they want but this was appalling. End the IPA madness not everyone likes it and it does not belong in all beer styles.
The beer runner asked me If I enjoyed everything and being as unapologetically truthful as I am, mentioned that I didn't like any of the beers I tried. The manager or bar tender came over, and after misunderstanding what I said about how the beers were not labeled correctly and all their beers in-fact were all "IPAs", he said "well why did you order so many of IPAs then" he laughed, I did not, then told me I was not going to be allowed to pay for the beers since I didn't drink them. This gesture was very nice I suppose but backhanded as I was not telling them this to get comped, or summon my inner Karen, or even to write a bad review I wanted to pay for them, all I wanted was it known their beers are all mislabeled and offensive. That exchange with the staff left a terrible taste in my mouth, or maybe that was the hops.
Understanding that only telling them would have not gone anywhere useful I decided to give you good people of Google Map review land the inside scoop. If you dislike hops in beers that should not be hoppy keep looking this is just another ill-fated IPA...
Read moreLook, I may not be the sharpest crayon in the trivia box (tonight confirmed that twice), but I do know a good brewery when I see one and Fate Brewing Co. on 7th Street? Chef’s kiss.
My friends and I wandered in for their Not Rocket Science Trivia night, fully expecting to flex our collective knowledge and possibly walk out as champions. Spoiler alert: we did not. But you know what? Losing has never tasted so good.
First off, the wings were crispy perfection, the jumbo pretzel was so good it nearly started a custody battle at our table, and the beer? Cold, flavorful, and dangerously easy to order again…and again. (And again.)
But the real MVP of the night? Jillee. This woman deserves a raise, a round of applause, and maybe her own sitcom. She kept our drinks full, our food hot, our water glasses refreshed, all while radiating joy, sass, and the kind of upbeat energy that makes you feel like you’re the main character in a brewery-based rom-com.
The vibe inside was modern, clean, and comfy, like if Pinterest and your cool cousin’s bachelor pad had a baby. Between the solid trivia hosting, top-tier food, and did I mention the beer again? we were in heaven. And just when we thought it couldn’t get better, we found out we could buy beer to-go as a consolation prize. Who needs a trivia trophy when you can walk out with a four-pack and your dignity still mostly intact?
Fate Brewing, you’ve got us hooked. We’ll be back… and next time, maybe we’ll win. Or maybe we’ll just drink and pretend we did. Either...

The bar. They brew truly excellent beer, from the traditional to the extremely unique. Whether you're into lighter beers, IPA's or stouts/porters, they have you covered. There are some that are truly special. And it's all really reasonably priced. The bartenders also are clearly trained on the brews and are great at describing or recommending things. PRO-TIP: Have Jesse make you a Fate michelada, or a beach beer. On that note, Jesse and Marco are both awesome bartenders, as is the manager who steps in to help on cocktails. (They make some solid craft cocktails, surprising for a brewery).
Great staff / operations. The place is managed really well, all the servers are extremely nice and seem to care about their jobs, and they're never short-staffed. Never had a problem or a wait getting a table. Even when it's busy, it's not a hassle and not uncomfortable; lots of room.
I've had 75% of the menu, and everything is good. And a few things are exceptional - the fried+grilled wings are top 5 in the city. And they have a great pretzel with beer cheese. My only complaint is the salads are kind of weak
They allow dogs, which creates an atmosphere of joy.
