So happy to see a Bolivian food cart in Portland after living in Bolivia for several years. They offer a number of excellent traditional dishes as well as plates more typical of countries across South America. Do yourself a favor on a cold rainy day and try something new.
Highly recommend the sopa de maní (peanut soup). It’s a very comforting creamy soup made by simmering raw unroasted peanuts in chicken stock, then blending until smooth and simmering chicken and vegetables, then topped with crispy fried potato slivers. Excellent on a rainy winter Portland day. But be warned that they only make it Wednesdays and weekends and when it sells out it’s gone.
