I’m a big fan of Taco Machine, not only for the great food but for the awesome owners who run the truck.
The food is genuinely good Mexican, which is hard to find in Portland. There are all the classic dishes you’d want, plus some creative items like the “vampiro” taco and the grilled cheese burrito (a burrito covered in cheese and then grilled crispy).
As a salsa aficionado, they’ve got great salsa and a lot of selections, some that are traditional and some not so much. I like the smoky and the chipotle mayo.
The staff is always so friendly and kind. The last time we were there, they gave us Mexican hot chocolate while we were waiting because it was cold outside.

They've been making a lot of upgrades, improving their truck and seating area for customers which means their prices have had to go up (3.50 per taco, which seems almost standard now at many places). They do Taco Tuesday tho where you can still get them for 2.50! They've also expanded their menu a lot with things like tortas, quesadillas, and Sinaloan tacos (w/ melted cheese and pepper).
