UPDATE:
This time, on my lunch visit, I was craving some delicious Chiles Rellenos. I ordered them with green chile sauce. While waiting for my order, I was greeted and treated to complementary chips and salsa, which were excellent. My mind was preparing for some incredible green chile sauce smothering some of the most scrumptious, adequately spicy, cheese stuffed green chiles coated in a hearty relleno batter.
This did not happen. The green sauce was lacking chile concentration and tasted a little too heavy on chicken broth or other ingredients. What I'm trying to say, is neither the flavor nor the heat were present in the dish. On the heat scale the plate was a 1 out of 10. The rellenos also arrived to my table lukewarm, which further retracted from the experience. I really wanted to cherish this chance to enjoy my most beloved New Mexican cuisine. It is one of the world's most unique and inaccessible cuisines, which in and of itself demands a certain reverence and respect. I left the restaurant full, yet disappointed.
Was it a bad crop? Had the chiles accidentally been rinsed by a less experienced kitchen hand? I may never know the answers to these questions. I will, however, grant La Escondida Cafe the benefit of the doubt by leaving 3 stars for the time being. Next time I may order the red chile sauce instead. I still believe in this establishment because I have tasted their potential.

I had a takeout order of Huevos Rancheros with red sauce and flour tortillas on the side. It was around $8.00, and boy was it delicious! My only regret was my choice of potato. I chose country potatoes instead of hash browns. The potatoes I received were boiled and bland, but no biggie. Next time I'll definitely choose the hash browns. The Huevos Rancheros were flavourful and had the added flavor and texture of the ground beef. The corn tortillas beneath were of good quality. The beans were house made, with a pleasant cheese blend melted within. The tortillas on the side were not overly starchy. They were a nice, flexible make with an authentic flavor, perfect for scooping whatever is left on the plate. I thought Martin's was the only place in town that could make a fulfilling huevos rancheros. Boy was I mistaken! Go here. (not open for dinner btw)

One girl was running the entire cafe by herself - hostess, waitress, busser, takeout orders, and everything. It was incredible. Give this woman a raise. Double her pay. She was doing the job of 4 employees. My coffee never even got cold. Best wait service I've ever seen (and I spent years in the industry). On top of all that, she was the sweetest; taking time to have small conversations with the elderly guests and always cheerful and pleasant.
