Went for father's day to enjoy the food with the family. I am originally from Ecuador and my goal was for my kids to enjoy the local meals, too.
Appetizers We ordered patacones, yuca frita and yapingachos. All great visual, taste and cooked to perfection. Yuca frita and the patacones were crispy! The green sauce was perfect. I believe it was a combination of basil, garlic, parsley/cilantro.
Meals I ordered Encocado de Camaron. It was superb My wife ordered seco de pollo and she mentioned that it was better than my cooking skills. :) My kids ordered pollo frito, churrasco and milanesa. Again, I tried them all (since it was my celebration day) and I can assure you that they were all great! not overcooked or undercooked.
You order your meal at front (no servers) and they bring you the meal to your table. Staff was nice and grateful. At the time to pay, the POS (Point of sale) showed the gratuity options (20% or higher). We always tip between 15%-20% depending on service. The meals were price accordingly (not cheap) and with no service staff, I found a bit strong to come with such approach. I wish the best to this local to keep growing, providing jobs...

There was a woman who had a short haircut and she was absolutely phenomenal and very helpful. Great job. All the food we ordered was really special, really unique, and really delicious. The LMO Salado was an absolute hit, the tenderloin was so juicy, so flavorful, so tender, and so moist, I’m still thinking about it as I’m typing this. We also tried the cheesy pancakes, and the empanadas. I honestly wanna come back tomorrow because I was so infatuated with how good everything tasted. This is definitely a place you need to try, even if you think you won’t like Ecuadorian food, you deserve to give it a try. Oh also, my brother ordered the mahi-mahi and it was mega delicious as well. Bravo great...

I won't brave the Trader Joe's parking lot for much. It's absolutely the kind of place I avoid.
But I'll have to devise a new strategy for coping, because I'll be back to Cimborazo again and again.
The setup is a counter/table service hybrid, and everyone there was extremely friendly (including with each other, which is always a great sign).
I'm not Ecuadorian, and I don't have an Ecuadorian grandmother, so I can only imagine that the Seco de Carne would stand up to hers - but it spurred that kind of imagination.
My wife was generous enough to share her Llapingachos with me - and it reminded me why I married her in the first place 😅
Also try the patacones on the appetizer menu - ours were perfectly cooked without too much oil coming through. Get more plantains in your life!
