Injera is a sour fermented pancake-like flatbread with a slightly spongy texture, traditionally made of teff flour. It is the magic wrapper of flavor for the foods that are served.
It is a fermented for 3 days. The technique is similar to making a crêpe, a very hot plate with very thin batter that is bubbled to perfection, but injera is spongy.
