Why everyone has to try Ethiopian food

In order to enjoy Ethiopian food as a midwesterner you have to OPEN your mind to eating food with your hand and scooping it up with a bread called Injera, and dropping it into your mouth. You actually use the bread so you don’t get your hands full of sauce.

Injera is a sour fermented pancake-like flatbread with a slightly spongy texture, traditionally made of teff flour. It is the magic wrapper of flavor for the foods that are served.

It is a fermented for 3 days. The technique is similar to making a crêpe, a very hot plate with very thin batter that is bubbled to perfection, but injera is spongy.

For foodies, it is this little bit of acidity that adds to the spongy texture to all these other flavors that are spread out on a platter. Take your time with this meal and enjoy the deep flavors of the mostly vegetarian offerings.

Man, this place was rough… The woman at the door barely looked at us until we asked if they were taking customers (she waved us in without looking at us), which should have been our first sign to leave. It took over a half hour to get our drinks, which we had to get up and ask for twice, our food took just as long, and we had to both wait and ask for appropriate utensils for the dishes not eaten with injera. The servers didn’t pay any attention to us, and when it was time to pay the bill, we had to go to the counter to ask since we couldn’t flag anyone down. The food was good, but the service made it absolutely not worth going. If you’re going to get food, order take out/delivery, but don’t even bother trying to get service if you want a...

Delicious and aromatic food in a cool and calm place. The vegetarian sampler was divinely seasoned, with a good balance of spice. You get a bowl of Vegetable broth soup as a starter with a lime and spicy sauce garnish, quite delightful and unexpected. The coffee ceremony was delicious and soothing with the frankincense incense. I wish the timing of the coffee had better communication, it would have been good to know how much time that takes. Water is served in a bottle instead of a glass, which was fine, but I guess I'm just a spoiled by glasses of ice water, so it threw me for a bit of a loop. Could have used refills of water throughput the meal. Just be prepared to ask for more bottles when you go. Very nice place to get beautifully prepared food.
