Well-established breakfast and lunch restaurant known for a wide variety of omelet offerings. Been here for years, and of course there's a good reason why. The place is always parked up which tells you it's got good food. Everything is pricier now (7/2023) but I was still surprised at the cost of breakfast. Plan on 40-50 bucks for two and that's not including having juice or any fancy coffees or the tip. The food was pretty much what you'd expect, tasty but nothing special. I was wanting outstanding yumminess because the place is so popular, but was disappointed. The biscuits and gravy were good; the biscuit part was nice and fluffy on the inside and the gravy was spicy but not from pepper...I'm guessing the heat was from one of the types of sausage that was used in making the gravy. Hash browns were good and crispy but needed salt. My Bennie was well made with the poached eggs just right and instead of canadian bacon, thin slices of ham were grilled then added to the dish. The hollandaise was good. The corned beef hash is house-made and was almost creamy in texture. Everything was served hot. You won't leave hungry! Friendly and attentive servers who keep the coffee coming. A solid four stars.

Updated just to say that Sybil's is still amazing! I must apologize to everyone reading this review for not posting photos. I will make a point of doing so next time because trying to describe their food in words will not do it justice. First of all, the portions are massive. So either be prepared to pig out like you've never pigged out before, or prepare to take home a couple days worth of leftovers. I ordered the standard breakfast, which I believe is the first one on the list, and I was bursting at the seams even though I didn't finish all of it. But aside from the portion sizes, the food is excellent and the service is stellar. Everyone is very nice and attentive. I don't think I've ever visited another restaurant that had so many employees buzzing around at all times, making sure your cup is full of coffee, your glass is full of water, and you have everything you need for an amazing dining experience. I even enjoyed the little bit of chatter with the cashier (was that the world-renowned Sybil herself? -- perhaps I should have asked for an autograph) on our way out.

Where else can you go and have 110 omelet options? Sybill's delivers. Service is excellent and friendly even though the restaurant is busy. Orders taken quickly and food is being served with little wait time. This restaurant is Salem's secret gem. Look at my menu photos. I got the 106 omelet. For those few with a hollow leg, get the 110 with 6 egg option. The omelet was cooked to perfection. The hashbrowns were crispy on the outside and the right firmness texture on the inside without bring mushy. I always get rye toast and this met my expectation. The wife got the senior breakfast and choose 3 items. Coffee never got below 1/2 full before our server came back around offering a refill. There are many reasons why this restaurant is so popular as i have highlighted our recent experience. Share your experiences.

I'm not sure how this place is as busy as it is, or how the reviews are as good as they are! I came here yesterday, dad's choice, to celebrate his upcoming birthday. It was a party of 4. My girlfriend, son and I didn't have to wait for a table, since my father had already been there waiting for us, but there seemed to be a bit of a wait. We were seated and after a few minutes our drink orders were taken. Our waitress seemed impatient and after I apologized for taking a bit getting my five years olds drink order, I got a brief, clenched smile. We placed our orders. The kid ordered kid pancakes with sausage, girlfriend ordered the bacon, eggs and biscuit with gravy, dad ordered the chicken fried steak and I ordered the corned beef hash. All of the adults were served first, and my child, was served a good 10 minutes after we got our food. It's pancakes, how long does it take? Anyway, girlfriend thought her meal was decent, but nothing to write home about. She's a biscuit lover, and didn't think they were that great, and the gravy, while basically homemade was way too peppery. My son ate the pancakes, and I took a bite and they were actually pretty decent. Dad was happy with his, but mine? Oh my god, I thought I was going to puke. It was canned corned beef, it looked gross, it smelled gross and I literally put a tiny bite in my mouth before I flagged down the waitress and told her that was the most disgusting thing I've ever ate. I re-ordered what my girlfriend had, and cautiously ate the bacon, pretty sure that they spit in my food. All in all it was about $55.00 for 4 people and I was not impressed. If you want quality go to Word of Mouth, if you want quick and decent food head to Shari's, but this place is NOT worth the 20...

Originally was going to go to Denny's, but the place was packed. Did a search for nearby breakfast restaurants and found Sybil's. I knew it was going to be good when I saw mostly elderly people going in and out. Also, from experience, restaurants that specialize in omelettes and have been around for awhile are usually pretty good. I don't know how long this place has been around, but it sure looks like they've been there a long time. So I took a chance.

I'm happy to report that I'm glad I did! I walked in the door and was immediately greeted by the very friendly hostess. They were fairly busy, but I didn't have to wait for a table. My server arrived shortly thereafter and was a very pleasant, smiling and polite young lady. So, since what kind of psycho would go to an omelette restaurant for the first time and not have an omelette? I ordered a chorizo and cheese 3 egg omelette and a large glass of milk to be brought with my food. Within 10 minutes of ordering, my food was at the table hot and ready, and the server went back to get my milk.

As expected, the omelette was top-notch! It came with hash browns and your choice of toast, biscuit, or English muffin. The eggs were fluffy, the chorizo was flavorful, and the hash browns were cooked perfectly. The server was attentive and returned several times to check if everything was okay. The price was a little on the spendy side, but I don't have any problem paying extra for good food and great service!

If I lived in the Salem area, I would definitely frequent...

Absolutely love this restaurant. Highly recommend. To start out we had the most amazing server. She signed our ticket Mel, but I cannot remember if her name is Melissa or Melanie. Wish I remembered. This was our first visit here and she recommended some of her breakfast favorites. I could not decide between the meat omlette or the chicken fried steak. She stated her favorite, same price, 17.49, was her favorite. The breakfast was chicken fried steak on top of bread, I think but not sure, a thin biscuit, hash Browns, two eggs, and biscuit and gravy.

She made a recommendation to my friend and she was spot on with both. She checked on us regularly, and always asked if we needed coffee. We sat there awhile after eating, and even though we said no more coffee she stopped by and asked. I kept taking refills.

Mel is energetic, has a sense of humor, VERY customer friendly, and was always at our table with a smile and ready to engage. She does not get paid enough. When I go back I will definitely ask for her. I am sure the other servers are wonderful.

Oh my gosh! So much food to eat the whole thing, but well worth to bring home to eat for another meal. The only reason I gave the meal four stars is I am very picky about my country gravy. It was very good but a little on the bland side, but not much. It was full of of ground sauage chunks that I love. The biscuit was huge and freshly made.
