Rib Tips are the ends that are cut off when butchering a St. Louis-style spare rib. Chicago-style BBQ utilizes these scraps into rib tips. When done right, they are like the “burnt ends” of a brisket. The Big Bib BBQ does them just right. They were smoky, tender, and juicy. One of the best I’ve ever had! Rating: 5/5
Baby Back Ribs were perfectly cooked, competition-style. The meat comes of the bone, not quite fall off the bone, which would be overcooked. It had a great rub for full flavor along with the smoke. I could eat a slab of those with no problem. Rating: 5/5
Brisket is made with certified Angus Beef. This brisket was one of the best cooked I’ve ever seen in a restaurant. Normally in restaurants and in competitions, I find that brisket is either under cooked or way over cooked. It should be sturdy enough to slice and not fall apart. When sliced, it can relax over the finger without snapping in half or be straight as a board. I also love when the fat cap is left on the brisket, which a lot of KCBS judges do not like. I personally think it helps to keep the brisket juicy and adds more flavor as it cooks. That said, this brisket checked all the boxes for me. I could eat a pound of this all by myself. I just love brisket and when it’s cooked like this, I love it even more. Rating: 5/5
Mild Sausage is hardwood smoked and crafted. Their sausage was a medium grind sausage with a good flavor of pork, smoke, and spices. I liked it sliced but also thought it would be great just inside a bun (like a hot dog) or sliced up in a sandwich. The casing had a nice snap to it which would make it perfect inside a bun. Jalapeno Sausage is a stable in Texas BBQ. It was a medium grind sausage that was just a tad spicy, not uncomfortable. It was juicy and had a good flavor. This would be great in a sandwich or in a bun with melted cheddar cheese. Rating: 4.8/5
Turkey Breast is smoked all day until melt-in-your-mouth tender. This was one of the best smoked turkeys I’ve ever had. Juicy and tender yet still easily sliceable. I could eat this as is or stacked inside a sandwich with melted cheese on top. Rating: 5/5
Baked Potato Casserole tasted exactly like a loaded baked potato. It was creamy from the butter and sour cream along with the flavor of cheese and smoky, salty bacon.

Both of their spittle was in VERY close range of the food. This looks bad, it's not sanitary, and disruptive to the work flow. Then a family was told they couldn't stay to eat as it was 6:30!! Rude! Then they were told they could stay. It was mean & unnecessary. Stop weirdos from disruptions and y'all can better stay on schedule. I feel bad for the employee that odd woman repeatedly went to talk to because she was put in an awkward situation where she needed to tell this person to 'please stand away from this area.', so she did not. Any person who is going to be this out of line could probably cause bigger problems when they're told the truth that what they're doing is not okay. This woman was old & physically able; anybody from a teenager on knows better regardless of who you are you know you're not supposed to be back there. Some people in line left after standing in line for a significant amount of time, I thought about it but I decided to watch the origin if my food and it did come from that section. Install an obvious, visible, huge sign with "EMPLOYEES ONLY BEYOND THIS POINT" sign so AT LEAST other customers know y'all respect yourselves, the food, & customers. And anyone unobvious employees need to put on a hairnet or name tag if they are walking where food is stored or prepared. The handicap space could be closer to the front door but it is close to the ramp that leads to the patio and then the front door. Our server and the trainee were so great, they actually point out where the trash recepicals are as well as the bathrooms. Nice touch when they find out its your first time in... They also bring you a little bowl of spicy chips... Don't share...look, this wasn't my cheapest lunch... Im blaming my hunger.. But I had a two meat plate, iced tea, potato salad and green beans so i could pretend I was eating healthy, and a banana pudding so I could know i wasnt eating healthy. The meats came dry but they have FOUR sauce choices at each table. I mixed the Big Bib one with the golden one. It was amazing. The ribs were not the meatiest but they were tender and juicy and delish. The spicy sausage wasn't THAT spicy for those tender eaters but man were they good. Great potato salad. Mustard style. The green beans turned out to be just slightly healthy, well because they were green beans, but I could have enjoyed a bowl of those and been happy. Little pieces of sausage in them took them to another level.... Ok now, the banana pudding.... This was so close to my mothers I was expecting someone to tell me I couldn't have the pudding till my room was cleaned.... A bit creamier though but it had the bananas and the vanilla wafers..
