Mad Dumplings — Restaurant in Santa Ana

I tried Mad Dumplings at the OC night markets as I had heard some great things about the dumplings. At the end of the night I wasnt mad per say but pretty disappointed. Wait time was about an hour. It seemed that part of the bottleneck was that they had the order taker also distributing out the food. Make matters worse the ONLY vege dumpling which was their fried Mac cheese was sold out. To make it worse they didn't take down or indicate ANYTHING to say they were sold out. At least be courteous and have a sign or something to show youre sold out. My wife was unfortunately out of luck on trying anythinf. I decided to cut our losses and order the chicken dumplings. Are they good? Yea pretty good. Nice and juicy. I also ordered their bulgolgi fries. I feel like I've ordered my fair share of bulgogli fries. These are not that great. Their waffle fries were actually excellent. The topping on their fries? Super sad. I had I kid you not 4 small pieces of jalapeneos, sauce and the saddest bits of bulgolgi beef . I really wanted to like this place but if you wanna try it definetly avoid it at any of the 626 or OC night markets. TLDR good chicken and waffles fries. I must've passed by this truck so many times at DIsneyland. I saw them on food network, and it was enough to finally convince me to try it and I must say, it didn't disappoint!

I had their bulgolgi waffle cut fries, mac and cheese dumplings, fried chicken, and their longanisa dumplings. Given I had this on a rainy day, the food warmed me right up! The waffle fries were crispy, which was a nice texture to the ooey bulgolgi and sauces that pretty much brought the whole entree together. Mac and cheese anything is always a good idea. The longanisa did came with crispy pork belly, and that was delicious!! Went well with the dumplings I do recommend coming here with a few friends so you all can order a few things to try. It's always good to have a variety of food to taste, yes?

Def one of my top food trucks! I was able to find the Mad Dumplings food truck this past Sunday at the Great Park Farmer Market. I ordered my fav 2 dumplings - loganisa and vintage. Although there was a line to order the food came quickly. The dumplings were hot, juicy and lots of flavor paired with individual sauces! Recommend trying Mad Dumplings if you spot them.
