True Texas BBQ — Restaurant in Schertz

I placed a simple order for a plain turkey sandwich at 3:01 PM while on a quick break from work. As I waited, I noticed the staff in the back just standing around and chatting. After about 10 minutes of waiting with no progress, I realized I was running out of time and politely asked the girl at the front to cancel my order. She didn’t make any effort to check on it or help.

Eventually, I had to ask for the manager. He canceled the order without much explanation when I asked why it was taking so long. There was no apology or acknowledgment—just silence and cancellation.

I left the place without any food, and to make things worse, I received a text 17 minutes after placing my order saying the sandwich was ready. Unfortunately, I never even got to try the food, but based on this experience, I can say the service was extremely disappointing. We were excited to get a True Texas BBQ at our local HEB in Schertz, so we were really disappointed after our first visit. Previously, we would go to the NB location which never disappointed. We ordered the Brisket Debri PoBoy, Mac n Chz, Sliced Brisket and Jalapeno Sausage. The sliced brisket was mostly fatty, which usually isn't a bad thing but this was like 80% fat. The sausage didn't have that BBQ flavor. It tasted like it was steamed. The mac n chz was just okay. The PoBoy was the biggest let down. It had like a tablespoon of Brisket. Nothing like the advertised sandwich. The staff was very nice. Service was timely and restaurant was clean. However, there were no napkins or lids for sauces at the self serve station. We will give it another try with hopes this is just opening glitches. The pictures are what we expected and what we actually got....

I’m here to eat the limited time only Brisket Birria Ramen. I cannot eat it. The ramen is still hard in a block not cooked. I asked to put in microwave and kitchen does not have one. They explained they only use hot water When I got my food I was not told to let it set 5 minutes. That should have been done before serving. When I got my food I was ready to eat immediately. I can do this at home waiting for ramen to cook. Sadly I’m taking it home to put in microwave. Paid 12.00 for a meal I need to finish cooking at home? That is very disappointing but I do want to try this item. But I should not be served something not fully prepared. Tasting the broth it’s good. But again even after writing this my Ramen has not cooked yet. Sounds like a great item but please do better. Serve meals...
