Eovaldi’s Deli – Chicago Combo Sub (12 inch Version)
There are good subs, there are great subs—and then there’s the Chicago Combo Sub from Eovaldi’s Deli, which exists in a league of its own. This sandwich doesn’t just satisfy your hunger, it defines what a proper deli sub should be. From the first bite to the last, it delivers big on flavor, texture, and authenticity.
First impressions matter, and this sub makes one hell of an entrance. Wrapped tight in classic deli foil, it opens up like a present you’ve been waiting all day to unwrap. What’s inside is nothing short of sandwich perfection: a crispy, golden-brown Italian roll, sturdy enough to hold up under pressure, but with a soft, chewy interior that gives way to the layers of deliciousness stacked inside.
Let’s talk ingredients—because Eovaldi’s doesn’t play around. The thinly sliced roast beef is packed in generous layers, tender and juicy with every bite. Melted provolone cheese lays down a creamy, savory note that ties the whole flavor profile together. But what really kicks it into overdrive is the giardiniera—a Chicago staple that brings the heat, the crunch, and a pickled punch that cuts through the richness like a knife. Add in sharp onions and tangy pickles, and the result is an explosion of flavor that keeps evolving with each bite.
This is not a sub that relies on gimmicks or fancy presentation. It's honest, it's hearty, and it's clearly made by someone who knows the art of the sandwich. The balance is impeccable—meat-to-cheese ratio, bread texture, spice level—everything is tuned just right. There’s no sogginess to ruin the experience, no corners cut on portion size or quality. Just pure, old-school deli mastery at its finest.
Whether you’re grabbing lunch, curing a hangover, or just craving something satisfying and bold, this Chicago Combo Sub delivers big-time. It's the kind of sandwich you remember. The kind you tell people about. The kind that makes you wish you ordered two.
Final Verdict: 10/10. Eovaldi’s Chicago Combo isn’t just a great sandwich—it’s a full-blown Chicago-style experience, right here in St. Louis. Deli purists and flavor chasers alike: this is the...
Read moreRead moreStopped here yesterday while visiting St Louis. Since I'm originally from Chicago where we do have quite a few great sub shops and Italian delis My bar is set high. I'm not a fan of Subway or Jimmy Johns. I like the real deal and Eovaldis is it. First off the bread is pretty darn good. Not quite on the Gonella or Turano bread from Chicago level but still very very good. You can tell it is fresh from a bakery for sure. And I had the create your own sub Choose 3 meats I got Mortadella, hot Capicola and ham. As for the cheese I chose Provolone. The quality of the meat is top notch. All sliced perfectly and stacked high. The cheese was sliced thin as should be. Onions were sliced thin as well. They make a fantastic sub. I ordered the 9 inch and it was VERY BIG !!! A six inch would be plenty. Very reasonable prices I believe the 6 inch was $7.95 and the 9 was $9.95 and well worth it . Very friendly owner taking orders. And it's a small yet charming little deli. Just what I want in a Sub and sandwich shop. Glad I chose this place when I Googled sandwich shops on the Hill. My cousin said his warm Chicago sandwich was one of the best sammies he had ever had. And we are in our 50's. They also have frozen Pizzas in a freezer along with home made sausage / Salsiccia and some other items all at extremely reasonable prices. If you are looking for an EXCELLENT little Italian del...
I'm no Oprah, but I do like bread. My wife, native St. Louisan, on the other hand, has had to swear off gluten due to its rude effects on her health. Darn gluten!! For that reason, after several years of marriage, this native KC fellow had never been to the famed "The Hill" for it's myriad gluten-laden dishes and for doubt that it would have GF options.
"The Hill" is the famed location for all of St Louis's Italian cuisine. Cuisine which I had been told made KC's Italian food look like the minor leagues.
In my head, "The Hill" had long been a sleek enclave of white tablecloth pasta ristorantes. While I do enjoy a nice plate of pasta al funghi, Italian deli sandwiches are more of "miei polli". Eovaldi's Deli was just that, except more pork products and less polli.
I had the Eovaldi special, 6 inch. It was layers of mortadella, salami, roast beef, and ham with tangy perperoncinis and pepper cheese. Even at 6 inches this sandwich was about as much as my fist-sized stomach could handle.
A buddy who was with me got The Daddy, Eovaldi's version of the meatball grinder. He generously traded half his sandwich for half of mine. I must say, as my dad used to say, he "ordered right." That bad boy was nuts.
Long story short, eat at Eovaldi's. And if you have to choose between The Special and The Daddy, get The Daddy.
P.S.the homemade chips are...
