I have a light commercial coffee bar in my home, have for years. I use flow control which allows me to tinker with different flow profiles with different coffees. I've seen a trend in the Seattle area where roasters were roasting lighter than what seemed necessary to adequately caramelize the sugars in coffee. As a result, these coffees produced brighter, more fruity, herbal notes, even a bit tart or sour. And yes I experimented with brew temps and flow profiles. They were missing the deep sweet roasty caramelized notes I look for in espresso. Only a few roasters seem to nail this, Espresso Vivace in Seattle being the top roaster for espresso in my own experience. I also noticed that when I weigh a programmed grind, that slightly darker roasts weigh less than the lighter roasts. When I get about 21 gram grind dose from vivace, the lighter roasts give me up to just over 24 grams for the same grind time. (I use a triple laMarzzocco basket). Flavor wise, for espresso anyway, it doesn't do it (for me). I read about Presta coffee and was impressed with their website and coffee menu. I ordered and tried their Espresso roast, but unfortunately it was way too tart, too bright, even a bit sour that would linger on the palate well after finishing my cappuccino. The caffeine presence was also much more evident with this coffee. (shipping was pretty quick) I could see it was a lighter roast, and the aroma tipped me off when I opened the bag. Others may find this helpful to know. Impressions can be subjective and vary with different people. That said, this espresso was way too tart for me. When pulling a shot, it turned blonde rather quickly....much like other light roasts I tried in the NW. Color was just about gone at 15-18 seconds. With Vivace, for example, the color was intense throughout a 25 second shot and even beyond in testing that. It's been said that color is flavor, and the light stuff is acidic, bitter, sour. Main review: I recently got into the hobby side of home brewing coffee, and at the recommendation of close friends and family, I stopped in to grab some beans. This is a nice cozy spot tucked in a complex with really cool design choices and nice outdoor seating as well. I came in not really knowing what roast/blend to get for my particular brewing apparatus I was using (Chemex), and the staff were very willing to give me pointers and recommendations on beans and even equipment! I ended up picking up some Colombian and Ethiopian beans (pictured) and have been VERY happy with my brews I have achieved with both. I asked him to please change my coffee since I had added creamer to it and the creamer tasted as it was old, the taste was like it had gone bad. Since I was with a friend, I asked her to try it, to make sure that it wasn't me. When I asked the barista He only responded to not add creamer to it. When I asked him if he was going to replace my coffee he said that the creamer wasn't the problem, he took the original container from the freezer and hand it over to me, stating that it was the same one that was out.
