I got the opportunity/experience to eat some "Texas" style bbq today. I have eaten central TX bbq so was excited to try this place, on someone's recommendation. Overall, I would say it's hyperbole to say it's TX style. Brisket was the best meat I tried. No wonder my buddy loves the brisket sando. Dipping the brisket in the sauce made it better. DON"T GET THE SAUSAGE. Get extra bbq sauce, it's AMAZING. I'd eat here again, though I'd likely avoid the beef rib and sausage and get extra brisket.
Service: Absolutely amazing. The cooks were awesome to talk to and took time to talk to me about how the meat was prepared and give recs on what to order. Really cool to have a front row seat to the slicing of the meats.
Sides: I ordered the potato salad and the cowboy beans. Potato salad was lacking, tasted bland. I loved the beans. Will definitely get beans again one of the highlights of me lunch.
Meats: I ended up getting a 3 meat combo plate with a beef rib, brisket, and their house-made sausage. The brisket was good. Decent bark, cooked well. I was only given slices from the flat, would have preferred the fatty. Even so, this was the best meat on my plate. A must have if getting bbq. I will get this again.
Beef rib was terribly undercooked. It wasn't raw, but it was not cooked near long enough as it was overly tough and not enjoyable. Flavor on the bits I did eat were good, like the brisket.
House made sausage: I was so looking forward to these. They told me they make them in house and it is a 50/50 beef and pork blend and has a little heat. I popped a couple bites into my mouth and had to spit it out. The sausage itself was good, but you could tell it was cooked in a dirty smoke and was just bitter.
My favorite part of the whole meal was their bbq sauces. We got a sampler of them all. Some of the best sauces I have ever tasted, well done! Even after my meat was gone, I dipped my fingers in the sauce...

The very moment you walk in, you are greeted with the beautiful and fragrant smoke that indicates a quality of the meat you're about to have played for you. The Texas influence is prevelent here! Known as a classic (and in my opinion, the best) style of Que, you'll be blown away at the quality of the product. I ordered the brisket sandwich and had it prepared in a Texas style that's not on the menu: chopped. I ordered it without the Alabama influenced white sauce and horseradish. I wanted a pure experience of their meet.
As I waited for the sandwich, I tasted their house barbeque sauce and I nearly teared up as I was taken back to my home sweet home of Texas. Their apple cider vinegar-based sauce is incredible. It's so good you could almost drink it! The "chopped beef" (as they call it in Texas) I had was so good, I believe I'm on terra firma to say that the Smokey Bone is one of, even not close to, the best BBQ joint in the state of Idaho. I only wish I lived closer to Twin Falls so that I could sample more of their menu. But, I'd probably just order this sandwich each time because it's so good.

Read moreWas visiting from out of town and like to try local spots when I travel. I was there just after lunch, about 1:30 and the food court was about half full. I'm pretty sad that this place was such a serious disappointment.
The guy that took my order was friendly, and answered questions that I had. I ordered a sandwich that had pulled pork and Mac and cheese on a Texas toast bread with a side of cornbread. My meal took what felt like forever to get to me, and customers that ordered after me got their food first. When I finally got my meal it didn't have any sauce on it so I had to go back up and ask for it. The side of corn bread was a pre-made, pre-packaged square of cornbread that was in a basket by the register (most bbq places give you a warm muffin or warm square, not a plastic wrapped piece of sand). The sandwich itself was luke warm and the bun was just two plain pieces of Texas toast. Not toasted, cooked, just two plain, soft pieces of Texas toast bread. The pork was dry and bland, maybe it would've been better if it had had some kind of sauce on it inside the sammie. The bbq sauce I got tasted unlike any sauce I've had. It was runny, like water, and tasted like vinegar mixed with brown sugar with no additional flavors -very off putting. Needless to say, I did not use the sauce.
