I never expected the best ramen I’d ever taste to come from a small, tucked-away town up north. I ordered the miso chicken ramen and my fiancé had the filet mignon bowl—both were phenomenal. The broth was rich, savory, and perfectly layered, and the noodles had that ideal spring and chew. They’re made in-house with heirloom wheat from the Mendocino Grain Project, all locally sourced from Ukiah. Out of towner here who went to Ramen Cubed to celebrate a birthday and was extremely impressed with the service and of course the ramen! I chose the Pork cube ramen and it was gorgeously displayed and even tastier than it looked. (perfectly cooked egg too) Plenty of meat in this large portion that I could barely finish but couldn't stop eating due to its taste. A good spot for Ramen. We ordered Tonkotsu and Ahi Tapa they are both delicious it may not like typical authentic Japanese Tonkotsu that has bean sprouts instead I found bell pepper, thin shredded carrots and edamame in it but quite tasty the broth was absolutely rich and flavorful the Seared Ahi has aromatic Smokey flavored in it which so good. Add up ingredients are available but watch yourself you may end up getting yourself a $40 bowl of Ramen.
