I've spent years exploring BBQ joints out West. The one thing that all of those places missed, when it came to pulled pork, is the flavor. There's only one flavor that you should experience with a pulled pork sandwich, the smokiness. In & Out BBQ nails that flavor. The only nitpicky thing that I could find is the lack of fat in the sandwich, as well as the bark. I know that quite a few people have an issue with pieces of fat in their pulled pork, but folks, that's just more flavor and texture. The sauce was a bit generic and thick for my liking. Kentucky's BBQ sauce has always been in between a Kansas City and North Carolina style. Sweet, yet vinegary and a more liquid consistency. Overall I was very impressed with the pork flavor. The smokiness was there, but could have been a bit more. Again, the absence of the bark was disappointing. If there had been more of that, along with the fat, this would have been a 5+ star review. They're known for their popular pulled pork sandwich. Also consider their smoked sliced brisket sandwich. They do have barbecue sauces, but always try the meat first to determine IF or How Much you need. If you like the smoky flavor, like I do, you'll probably forego the sauce and enjoy the savory experience. Had the creamy coleslaw, which was a great compliment for the brisket.
