Billy makes a phenomenal macchiato—the way it’s supposed to be! So many places get this wrong, but not here. The balance and flavor of the macchiato were perfect, and it truly elevated my entire experience. Waxwing Bakery offers both dine-in and to-go options. If you decide to dine in, I highly recommend bringing a box of treats home with you. Trust me—you’ll be thinking about the flavors and wishing you had grabbed just one more pastry or cookie to enjoy later! This bakery is owned and operated by a talented husband-and-wife team who clearly know their craft. Their passion and expertise are reflected in every item they make. Waxwing is a GEM! Gone are the days when you have to drive into Portland to get an actually good coffee, croissant or freshly baked artisan bread. Co-owners are awesome, Hannah used to be the kitchen manager at Tandem and they also carry Tandem coffee and so excited Waxwing is just as amazing and delicious. Highly recommend. Also reasonably priced but high quality. The blueberry cream cheese danish I had was amazing, as was the lemon poppy olive oil cake and chocolate croissant. The quiche is really good too, generous portions and very hearty with a really nice flavor profile (one of the best I've had.) Can't wait to go back (already been twice) and see this place thrive!

This is a top quality bakery on an international level, no kidding. The pie crust is the absolute best you will find anywhere. Crisp, short, and stunningly delicious. If you've tried the quiche at Tandem Bakery in Portland - it's a very similar crust - both notably fantastic, but Waxwing uses that same amazing crust recipe for their pies and Tandem sadly doesn't (or not always).

The base quiche recipe is so creamy and light, just fabulous, but the flavorings of the day are marvelous or meh (if you don't like large chunks of potato in your quiche, which I very much don't). Those potato chunks are about the only thing I've tried that hasn't been notably terrific. The sourdough bread is great, scones have a terrific crumb, and the various pastries are all incredibly good. It's obvious that top quality ingredients and care are being used.

Ahhhhhh....... but right now (August 2025) is blueberry season and the baker has a Maine low-bush blueberry pie to die for. BEST I've ever had and I've tried so many since I moved to Maine in the early 90's. I love them, and this one wins the prize. It's so refreshing and perfectly balanced. Get some...
