I went to Still Austin Whiskey Co. tonight 3/29/2024 at around 8:45 PM. I had been wanting to go for months, no exaggeration. After a long week and an extra miserable week at work, I decided tonight is the night. On the way over there, I was beside myself with excitement at the thought of finally purchasing a bottle from the distillery, and drinking a draft cocktail. I even told my fiance, “thanks for bringing me!” She said she wasn’t paying, and that this was all me, her dry response to my obnoxious excitement to finally coming to Still Austin Whiskey Co. When we got to the bar I realized I only had 15 minutes to try 4 tasting samples of whiskey to decide which bottle I wanted to try. No problem, I’m not a picky person, I don’t know anything about whiskey, I can decide after one sip. As I was telling the bartender which drinks I wanted, I was nervous, but I know I wasn’t taking too long. I take too long when I get anxious, my fiancé HATES when I do this and can attest that this wasn’t one of those times. “Single Rye Bourbon, Straight Rye Whiskey, The Artist, the Bottled in Bond -“ “WE DON’T HAVE THAT ONE.” The bartender yelled at me. Taken aback, but as someone who belittles themself I thought okay, maybe I’m being annoying. So I said, “Straight Rye Whiskey, Cask Strength -“ “YOU ALREADY HAVE THAT ONE, THIS ONE IS CASK STRENGTH!” The bartender yelled at me a second time. I said, “I know, I said the artist the first time, and cask strength the second time.” At this point I knew it wasn’t me, my fiancé (I cannot stress this enough, she never takes my side on anything, and assumes everything is my fault) shared a look of bewilderment with me. It was also at this point I decided I no longer wanted to purchase a bottle, the bartender gave me the four small glasses to take to my table, and didn’t take my fiancés order, they just looked at us like they wanted us to leave. I didn’t care what I was drinking anymore. I drank them as quickly as I could, then left. I chose the Shotgun Wedding—a refreshing blend of gin, cantaloupe, limeade, and a sprinkle of Tajin, priced at $12. One drink was all I needed—these cocktails really pack a punch! The balance of flavors was impeccable, making it both refreshing and satisfying on a hot day.
We enjoyed our drinks on the spacious back patio, which was equipped with plenty of fans and umbrellas to keep us cool. The outdoor area offered a relaxed atmosphere, perfect for unwinding, whether you’re there for a tasting, a tour, or just to enjoy a beautifully crafted cocktail. Still Austin is a must-visit for anyone who appreciates quality drinks in a thoughtfully designed setting.

We returned to Still Austin Whiskey Co. for their 7th anniversary, and it was another memorable experience! Honey Made had everyone grooving with their lively performance, and Still Austin delivered once again with their delicious cocktails. I had a Cereal Killer—a creative mix of Straight Rye, Cinnamon Toast Crunch, coconut milk, and cinnamon brown sugar, which was both fun and flavorful. I also tried the Bee’s Knees, a classic gin cocktail with honey and lemon that was light and refreshing.
The highlight of the day? Celebrating the 71st birthday of "D Bone," the trombone player! The overall energy of the event, combined with great music, drinks, and company, made for a fantastic Saturday afternoon. Read moreJust, wow. visited Still Austin in July 2025, and it absolutely exceeded my expectations. First off, I was thrilled to find three bottles of Nancy’s Pick—their July 2025 Cask Strength Rye—on the shelf in the gift shop when I arrived. I immediately snagged two bottles before my tour, just in case they disappeared by the time I got back. Good thing I did!
Before the tour, I grabbed a cocktail and enjoyed some delicious pizza and salad from the Italian food truck on-site—perfect way to start the afternoon. The distillery tour itself was fantastic and genuinely eye-opening. Charlie was a fantastic tour guide, did an amazing job walking us through the history and detail of the product and put up with all my nerdy questions. The innovation happening at Still Austin is wild—in the best way. From how they source their water to their creative aging and proofing techniques (including for their gin, which is 75% corn and 25% rye!), to the one of a kind column still (the other Nancy) this team is doing things differently—and it shows.
Their bourbon is excellent, but their rye is where the magic really happens. The rye is sourced from the warm Texas panhandle, which gives it a soft, floral, sweet, and rounded character—totally distinct from the more vegetal, spicy northern ryes. It’s truly unique and absolutely phenomenal. Honestly, I’ve never had anything quite like it.
The red corn bourbon was another standout, and the cocktails at the bar were top-notch. Nancy Fraley’s influence on their blending and barrel program is clear—and it’s paid off in every pour.
