A few nights ago, my wife, our close friend, and I had the pleasure of dining at Mitate Soba, and it was an experience that left us utterly captivated. From the moment we stepped into the restaurant, we were welcomed with genuine warmth and hospitality by the chef and staff, who made us feel like cherished guests.
Opting for the omakase course was undoubtedly the highlight of our evening. Each dish on the carefully curated menu was a masterpiece in its own right, showcasing the chef's artistry and creativity.
The journey began with a refreshing cold soup infused with mountain vegetables, setting the stage for the culinary delights to come. The Mitate galette, with its decadent combination of tuna, caviar, and wasabi, was a perfect introduction to the chef's innovative approach to Japanese cuisine.
The seasonal soba noodles, paired with firefly squid, were a revelation, offering a perfect balance of flavors and textures. Grilled bamboo shoots added a delightful bite and depth to the meal, while the assortment of seven different appetizers provided a tantalizing array of tastes and aromas.
Highlights of the meal included the soba sashi, featuring tender tuna head with Japanese pepper flowers, the sudachi soba, with its sliced sudachi limes, and the Uni soba, with its luxurious sea urchin topping.
The bamboo shoot and Japanese pepper flowers rice bowl provided a comforting and satisfying conclusion to our meal, while the sobagak dessert with brown honey left us with sweet memories to savor.

The specialty here is soba where you see the chef make it from scratch; and a few dishes include soba from wide, thick, thin and also in galette form. For the last soba dish, you can choose from a list and I had the cold soba thin cut with sea urchin which was unique and very tasty.
